Breakfast Casserole II

I love this recipe! I have made it many times and have tried a few different variations. My favorite so far has been using bacon instead of sausage. I have also added salsa to the mix before and brought it to a potluck and it was gone in a flash and went over big. Thanks!

Easy Bacon and Cheese Quiche

This quiche is so quick and yummy! I usually just make it with a bag of shredded Italian cheese and leave out the onions because my kids don't like them. I also use the Oscar Meyer bacon pieces instead of bacon bits, or I use real bacon. And to keep the crust from getting too dark I wrap it with a bit of tinfoil. Thanks!

Irish Cream Truffle Fudge

Caramel Pretzel Nut Popcorn

This was pretty good. It made A LOT and we gave most of it as gifts and saved some for us and I was sad when we ended up throwing some of it away. We added M&M's to the mix but other than that kept the recipe the same. I will probably make this again, but maybe just on a smaller scale. Thanks!

Chocolate Pretzels

These were the best! I wish I had made more though. Next time I want to try some of the different flavored kisses and M&M's, like maybe mint chocolate. I used square pretzels because I couldn't find the round type. Thanks!

Easter Leftovers Casserole

I made this recipe with leftover Yukon Gold mashed potatoes and some ham and I wasn't sure how good it would be. But I was very pleasantly surprised. I actually burned my mouth a tiny bit eating it before it had cooled down it was so good. Thanks!

Awesome and Easy Creamy Corn Casserole

Hands down my favorite recipe from Allrecipes.com! Every time I make this I get the best praise, but I've only given out the recipe once (okay, so I'm a bit selfish, I admit!). I like to mix it all together in the casserole dish so I only have one dish to clean. Thanks!

I really did not like this recipe very much at all. The almonds gave it a texture that was not very appealing. The flavor of the dish itself was okay. I will not make this again.

Shrimp Jambalaya

I really liked this recipe and had fun playing around with it a bit (although one time I added way too much orzo and it was way too thick). You can use different spices, although I used a Cajun seasoning mix that I already had on hand. I left out the green peppers because I don't like them, but otherwise kept the recipe pretty much the same. Thanks!

Spicy Chipotle Turkey Burgers

These were the best turkey burgers I ever had! For the peppers I just bought the smallest can I could find, ground them up in my mini food processor (although a blender would work too) and I used about a tablespoon of it total for all four burgers. I might use more cilantro next time. These were just great!

Easy Cheap and Yummy Casserole

The recipe title says it all-easy, cheap, and yummy! I think I only spent like $4.50 total on this meal. I did change the recipe a bit because I wanted to squeeze a veggie in there. I put in 2-28oz cans of Bush's Original Baked Beans, then a whole package of sliced hot dogs (8 total). For the topping, I mixed two boxes of Jiffy Cornbread mix with one egg, 1/3 cup milk, and 1 can of creamed corn. I baked it at 400 for about 40 minutes. It was very good! With the top the way I made it, it was almost a bit like one of my other favorite recipes from this site, Awesome and Easy Corn Casserole. I will definitely make this again!

Easy Pasta Fagioli

I made this for a girl's night in and it was a hit! The only changes I made were that I used about half a small onion (the recipe says one slice?)and after I had sauteed the veggies and added the liquid (I eyeballed it using some chicken stock granules), I cooked the pasta right in the broth to save time and dishes. When the pasta was al dente, I added one can of tomato sauce (15 oz. I think?) and one can of diced tomatoes with Italian herbs in it, plus the can of white beans. Oh and I also had precooked some Italian sausage and drained it realy well, and then added it at the end with the beans. I also put a couple of teaspoons of sugar to balance the tartness of the tomato. Very good recipe, especially with some crusty French bread. Will definitely make again!

Slow Cooker Chicken Stroganoff

I loved this recipe! I didn't realize it only needed to cook for 5-6 hrs when I put the chicken in the crockpot before I left for church and I was worried we would end up having to eat it for lunch. When we came home, the house smelled great and the chicken had a nice color to it. When I added the brick of cream cheese and one can of soup, I was worried it would taste too much like cream cheese. I was also worried that since I was going to try to keep it in the crockpot til dinnertime that it would thicken up too much or dry out, so I added another can of the soup and never turned the heat to high. It was wonderful! I cooked the noodles and threw them in with the soup for the last ten minutes or so. Everyone had seconds and it reheated well too. Thanks!

Blackened Green Beans

I needed to bring a side dish to Thanksgiving dinner but was tired of the same old Green Bean Casserole. This recipe inspired me! I used canned green beans since I'm not too fond of fresh, but next time I will try frozen since mine turned a bit mushy. I also added a can of golden mushroom soup (which is so much better than cream of mushroom) and I only used half a pound of bacon since I already had it left over. It tasted great, although it didn't look too appealing. I invited some friends over the next day and we served left overs and one of the husbands said, "You know, I only took a little bit to be polite because it looked kind of gross, but it is actually really good!" Next time I will try to stick closer to the original recipe, but overall the idea was great!

Parmesan Puffs

My friend and I decided to try to make these together for a girls night in and they were really good. The main complaint I had was that the dough was REALLY thick and we had to take turns mixing it to get it smooth and both of us ended up with sore arms. But the cooked product was worth the effort. Next time I think I will try adding a bit more liquid if it's as thick to try to loosen it up. Thanks!

Pita Pizza

As with any other type of homemade pizza, by the time you buy the pitas, sauce, cheese, meat, & veggies, you are looking at a very expensive meal. But it is always fun for everyone to make their own creations, especially the kids. We tried grilling it a couple of different ways and found the best way is to grill for about 30 secs-1 minute on one side of the pita, then take it off the grill and load the cooked side with the toppings, then place back on the grill for a few more minutes til the cheese is melted. Will definitely make this again, although next time I might try doing it potluck style with some friends and have everyone bring a couple of ingredients to help bring down the cost. Thanks!
