Foolproof Rib Roast

Totally foolproof!!! I use crushed garlic, rosemary, salt, ground pepper and olive oil to rub mine down with...works every time and has everyone drooling until it's served!

Awesome Sausage, Apple and Cranberry Stuffing

This was the first time I've ever made a stuffing like this. My husband grumbled the whole time because "He doesn't like stuffing with fruit...blah,blah" Not only did he go back for seconds but we had it for leftovers the next day too!

Since I have to watch my sodium intake due to High BP I try to find ways to make my own mixes all the time. This was the BEST I've ever found, better than any mix you can buy in a store!!!

Southern Fried Chicken

Next time I will use less oil and just brown it without a lid then add a little water and cover it to finish it. This is the way my Mom makes it and it stays so moist and yummy!

Barbequed Ribs

This recipe was a hit at a BBQ I hosted last week! We all loved it. The only change I did was to sweeten the BBQ sauce a little bit with more brown sugar. The rub was so fantastic that I use it all the time now on everything I BBQ! Lots of ingredients but I think it's worth all the effort!!!

Allison's Pasta Salad

I just made the dressing of this recipe for a pasta salad I was making so I'm just rating the dressing not the whole recipe. I found that it didn't have quite enough flavor. I added about 1 tsp more dillweed and sqeezed in some lemon juice to brighten the flavor. I liked cutting the mayo with the sour cream it sure lightened it up! Not bad with the tweaking I made!

Sicilian Meat Roll

I got this recipe from a friend in college manay moon ago and had lost it. I am so happy to see this recipe as it is my favorite way to make meatloaf. I highly reccomend this and the only thing I would suggest is to use a meat thermometer to check for doneness. The tomato juice and ham give it a pinkness that makes it hard to tell when it's done. This recipe will be appearing on my menu this week!!!

Chutney Chicken Salad

This was soo yummy! I used a peach chutney I had bought at a farmers' market a while ago and it worked out great. I didn't have a lime in the house so I just used good ole concentrated lime juice and a little extra to make up for the zest. I had mine, as it the recipe was on french bread with lettuce. I will definatly be making this again, a nice change to plain chicken salad!

Coconut Coffee Liqueur Cake

This cake turned out great and my hubby loved it. I wouldn't make it with all the layers the next time, I would just do the two layers so that it wasn't so fussy to make. I added a stabilizer to the whipped cream so it stayed firm longer and it worked well.
