Creamy Tomato Tuna Penne Pasta

This is very tasty, I didn't have fresh garlic or anchovy, or tarragon, so I used garlic powder, and wasabi (don't ask me why) and I used my left over homemade tomato soup. Excellent, nice flavors, next time I will make sure I have all the ingredients and make it as per the recipe. Easy and quick

Caribbean Pasta with Shrimp

Excellent, even my husband who is not a curry fan went back for seconds. Didn't have any Grand Marnier so I mixed some orange juice and brandy. Couldn't find chili paste so I used some chili sauce. It was great. This is good enough to serve to company. Next time I will try it with chicken. Love the flavors.

Brooke's Best Bombshell Brownies

I have made this recipe twice now and have received rave compliments both times. I always add some walnuts and the second time I added a dash of vanilla, why I don't know, I think I just like vanilla. Instead of unsweetened cocoa powder I substituted hot chocolate mix which I have been trying to use up, in doing so I cut back on the sugar slightly. These brownies taste wonderful. One thing I did notice was the cooking time for both batches was twice as long as the recipe called for, maybe because of the Hot Chocolate Mix. I still have some hot chocolate to use up, so I will be making more of these until it is gone. Then I will try them with the unsweetened cocoa and see if there is a difference. Love them.

Dr. Michael's Yeasted Cornbread

We are in a small village in Costa Rica where it is difficult to find decent hamburger buns. I thought I would give this recipe a try. It was my third different recipe attempt. I used the dough cycle on my bread machine and after it was complete, I rolled the dough out and cut it into 3 inch circles, and let them rise about 40 minutes. I put a empty baking pan at the bottom of the oven while it was preheating @ 385. Put the buns in, added water to the pan and baked for about 18 minutes. These were incredible, the best buns we have had in a long time. I will look no further they were that good.

World's Best Lasagna

This is a wonderful recipe. Being in a very small town in Costa Rica it is difficult to find certain items. I was fortunate enough to find all the ingrediants except the fennel. I honestly don't know if the fennel is necessary, this lasagna got rave reviews from all my guests.

White Fruit Cake

What a great cake. I had to substitute a few things because they are just not available in Costa Rica. I.e currants and I couldn't find pineapple chunks, But I just substituted equivalent amounts of what I could find. I also added some brandy. Had the cake prepped and ready to go in the oven and realized I had forgot the egg whites. Remixed the cake and baked it in the oven. The smell, the taste, it is abosolutely wonderful. It is a must on my Christmas baking.

Tantalizingly Tangy Meatloaf

Great recipe, I have made this many times and I always get compliments and requests for the recipe. I have made it with fresh pineapple and it is excellent. Another time I was out of pineapple preserves and used blueberry preserves instead, just as good. Versatile recipe and very easy to make.

African Chicken Stew

Loved this recipe, flavor is incredible. I added different veggies, but I stayed true to the spices. I agree with some, appearance wise it is lacking, but add some colorful veggies and it perks up. If you like cumin and coriander, you will love this.

Chinese Spareribs

Wonderful recipe. I parboiled the ribs first and them marinated them overnight. I skipped the water in the pan part. Lined a pan with foil and cooked them at 325 for about an hour and half, basting every 1/2 hour. They were wonderful, fell of the bone. This recipe is a keeper.
