Basil Cake with Balsamic Strawberries

Reviewed: Jul. 7, 2014
I made a sour cream pound cake from scratch, using the same number of eggs, butter, vanilla, and the basil, then made the balsamic strawberries as directed. It was delicious. I really liked that it was not overly sweet, and the basil was very subtle but added a nice herbal note. I took it to a zoo concert and shared with my friends and total strangers; universal thumbs way up.

Easy Nanaimo Bars

Reviewed: Apr. 24, 2014
These are easy to make, and I liked the graham-walnut-chocolate base; I might use the cookie base for a cheesecake in the future. They are very sweet, so I cut them into 1-inch squares.

Toffee Cherry Butter Tarts

Reviewed: Dec. 5, 2013
I didn't have quite enough sugar for 1/2 the recipe, but went ahead anyway (with about 3/4 cup). I thought my dried Bing cherries were bland, but the little touch of vinegar added the tartness they needed. I made 11 tarts, muffin-tin size; they were plenty sweet, and really tasty.

Pecan Cranberry Butter Tarts

Reviewed: Nov. 25, 2013
These were delicious. I took them to a holiday party and got raves. At 19 minutes baking time, they were just the slightest bit runny still in the center.

Canadian Maple Scones

Reviewed: Oct. 14, 2013
These scones are delicious, moist and tender; love the toasted walnuts. I substituted 1/4 cup whole wheat flour just for a little extra flavor. Seemed like the recipes made too much topping, but it was just about perfect once the scones expanded while baking.

Maple Tuna Olive Toastie

Reviewed: Oct. 8, 2013
The maple caramelized onions were so delicious! I will definitely double them next time. I used a sliced kalamata olive bread. The sandwich had a nice balance of salty, sweet, savoury.

Roasted Beets 'n' Sweets

Reviewed: Oct. 7, 2013
I roast a lot of root veggies, but never combined sweet potatoes and beets before, and it's a great combination with the onion. Used fresh garlic, and it worked just fine.

Double-Butternut Squash Soup

Reviewed: Oct. 7, 2013
The combination of chili powder and cinnamon gave the soup a lovely, subtle flavor, which really surprised me. I used ground almonds, and cooked them in the butter until they took on a little color. Other than that, I followed the recipe pretty closely. The almonds work some kind of magic with the flavor and texture. A really nice soup.

West Coast Trail Cookies

Reviewed: Oct. 7, 2013
Tasty, rustic, chewy cookie. I used pumpkin seeds with shells on, because I had them, and I liked the extra roughage.

Catherine's Pickled Blueberries

Tangy, fruity, a little pickle-y but not overmuch. It's pretty fab on my homemade chevre.

Gkai Kamin

Reviewed: Jul. 30, 2009
I embraced the yellow-stained fingers when I made this! It finally wore off. Fresh turmeric is bizarre, a creepy looking brown tuber that is bright orange when you peel it. The chicken with this rub on it was flavorful, almost citrusy, a pretty subtle flavor to me, but I really liked it.

Restaurant-Style Coleslaw I

Reviewed: Jun. 25, 2009
Nicely sweet, but not too much so; nicely creamy, too. I made this to put on Carolina-style hot dogs, but I can see it on a pork-and-slaw sandwich, or at any barbecue. Really nice balance of flavors and crunch.

Pat's Baked Beans

Reviewed: Jun. 25, 2009
I've always mixed different beans in my mom's Great Northern baked bean recipe, so I guess that's a slippery slope, because now I plan to abandon the family traditional recipe in favor of Pat's. These may be the best baked beans I've ever eaten. Yep, they are.

Best Carolina BBQ Meat Sauce

Reviewed: Jun. 25, 2009
This is so good that I want to put it on everything. We made this to top a Carolina style slaw hot dog, and it was perfectly spiced, tangy, and delicious, and a big hit with the workmates. Yesterday I put it on the cole slaw and the beans that were leftover from the hot dogs, and it was just as good.

I've never made flan before, because the caramel part was a little daunting. I made this (with fresh goat milk, even!) and it was as delicate and sumptuous as could be!

Chiles Rellenos de San Joaquin

Reviewed: Apr. 21, 2009
Te saltiness of the cotija played really well with the cumin-onion-tomato topping (it's more like a topping than a sauce, but it's just enough). I had a little trouble wrapping the chiles around the cheese, so I used some toothpicks to close them up, and put them in the baking dish cheese-side-up, like boats. I'll definitely make these again.
