Chicken Enchiladas

I broke my ban on recipes using condensed soup for this one - and it was worth it! I used Pepper Jack cheese for a little extra kick, and these were great.

Fried Onion Rings

Pay no attention to the nay-sayers of this recipe - it is REALLY good. Only change: salt and pepper to taste, not pinches. Otherwise, crispy and delicious!

Eggs Benedict

Eggs Benedict is my husband's favorite, and he loves this recipe (with the lemon juice measured in TSP, not TBL). And it takes me only about 10-15 minutes to make, not the 30 that the recipe says. I try to do as much simultaneously as I can, so all the pieces stay hot.

This was SO good! I made these as mini-quiches fpr a party and they were quite a hit! (FYI: A half-recipe with 2 pie crusts makes about 3 dozen mini-quiches.)

Valentine Night Strawberries

It's Valentine's night and we just finished our Valentine's Night Strawberries. So good! My husband is diabetic so we need a lower-carb alternative, and we hate artificial sweeteners. This was perfect! I did add vanilla extract as others suggested. I also skipped the nuts (personal preference). It really is like a reverse cheesecake.

Creme Brulee

I served this for Christmas dinner (following CHEFPEON's directions) and it was a HUGE hit. Next time I will use brownulated brown sugar (my topping clumped a bit). The fact that most of the work was done the day before made for a simple final prep with a giant WOW factor.

All American Roast Beef

This was the first time I ever made a beef roast and it turned out great! I added a cup of water as suggested by others. It was moist, juicy and tender. (I did make a rookie mistake of bringing the meat straight from the refrigerator to the oven, so it took a little longer to cook.) This got the highest compliment from our house: an enthustiastic "We can have this again!"

Baked Teriyaki Chicken

I deboned the thighs and they cooked in about half the time. What I will do differently next time: Definitely line the pan with foil. The baked-on sauce was really hard to clean.

Old Fashioned Onion Rings

These were SO easy to do and fun to make. My only change: The recipe says to slice the onion rings 1/4" thick. These were too small and were overwhelmed by the batter. When I make them the next time I will slice the onions at least 3/4" thick so they don't get lost.

Glazed Corned Beef

This was surprisingly good. Next time I will do as others have suggested and cook first in the slow cooker and finish with the glaze in the oven. I will make the glaze again with just the carrots - yummy!

Squash-Apple Bake

This was a hit at Thanksgiving dinner - even with the people who said they don't like squash! I cut the squash pieces to be about the same size as the apple pieces and it cooked within the time given in the recipe. I also used nutmeg and cinnamon rather than mace, and topped with walnuts to make it'fancy'. Yum!

Marie's Easy Slow Cooker Pot Roast

The best pot roast, and it keeps getting better each time I make it! I did find it too salty so I didn't season the meat with salt before browning, and I add the vegetables about 1 hour before the meat is done.

Pumpkin Brulee

This makes a great Thanksgiving dessert - not the same old pumpkin pie. Only issue that I had: it took me about twice as long as stated in the recipe to get the brulee to set.

Zesty Barbeque Marinade

I followed the recipe exactly. We also did flat iron steaks and they were terrific. The only thing I will do differently is halve or quarter the recipe - this makes a huge amount of marinade!
