Easy Tortellini Salad

Reviewed: Aug. 26, 2013
I just used cheese tortellini from Trader Joe's and Vidalia onions and skipped the carrots (too lazy to grate them). This was phenomenal. People who claimed not to care for pasta salads loved it. I made the dressing with very high quality oil and vinegar, which brought this over the top. And it really was easy - it was a last minute addition to a party buffet based on things I had on hand.

Slider-Style Mini Burgers

Reviewed: Aug. 26, 2013
I served these at a party yesterday. Not my taste, but my guests gobbled them up! I will put this in my regular party food rotation - it is really easy to do and everyone really liked them.

Pumpkin Brulee

Reviewed: Nov. 25, 2011
This makes a great Thanksgiving dessert - not the same old pumpkin pie. Only issue that I had: it took me about twice as long as stated in the recipe to get the brulee to set.

Squash-Apple Bake

Reviewed: Nov. 25, 2011
This was a hit at Thanksgiving dinner - even with the people who said they don't like squash! I cut the squash pieces to be about the same size as the apple pieces and it cooked within the time given in the recipe. I also used nutmeg and cinnamon rather than mace, and topped with walnuts to make it'fancy'. Yum!

Quiche Lorraine I

Reviewed: Aug. 23, 2011
This was SO good! I made these as mini-quiches fpr a party and they were quite a hit! (FYI: A half-recipe with 2 pie crusts makes about 3 dozen mini-quiches.)

Pizza Sauce and Dough

Reviewed: Dec. 13, 2010
I only made the sauce for a stromboli. It was so good! I used canned diced tomatoes and dried spices, but it came out great.

Baked Teriyaki Chicken

Reviewed: Oct. 21, 2010
I deboned the thighs and they cooked in about half the time. What I will do differently next time: Definitely line the pan with foil. The baked-on sauce was really hard to clean.

Fried Onion Rings

Reviewed: Sep. 28, 2010
Pay no attention to the nay-sayers of this recipe - it is REALLY good. Only change: salt and pepper to taste, not pinches. Otherwise, crispy and delicious!

Eggs Benedict

Reviewed: Feb. 14, 2010
Eggs Benedict is my husband's favorite, and he loves this recipe (with the lemon juice measured in TSP, not TBL). And it takes me only about 10-15 minutes to make, not the 30 that the recipe says. I try to do as much simultaneously as I can, so all the pieces stay hot.

Welsh Rabbit (Rarebit)

Reviewed: Jan. 18, 2010
I made this as a fondue (added a little more cheese and some flour to thicken it) and had English muffin pieces as dippers. It's a keeper!

Chef John's Salt Roasted Chicken

Reviewed: May 30, 2014
This was amazing! The chicken was so moist. The gravy, however, didn't work for us. I took the 'salt generously' to heart and the pan drippings were way too salty. It had a great taste under all the salt so we'll try making the gravy again.

Creme Brulee

Reviewed: Jan. 6, 2009
I served this for Christmas dinner (following CHEFPEON's directions) and it was a HUGE hit. Next time I will use brownulated brown sugar (my topping clumped a bit). The fact that most of the work was done the day before made for a simple final prep with a giant WOW factor.

All American Roast Beef

Reviewed: Aug. 27, 2008
This was the first time I ever made a beef roast and it turned out great! I added a cup of water as suggested by others. It was moist, juicy and tender. (I did make a rookie mistake of bringing the meat straight from the refrigerator to the oven, so it took a little longer to cook.) This got the highest compliment from our house: an enthustiastic "We can have this again!"

Fiesta Chicken and Black Bean Enchiladas from Mission®

Reviewed: May 6, 2015
This was our Cinco de Mayo dinner. Only difference from the original recipe: we used about twice as much enchilada sauce as the recipe called for. Otherwise it would have been too dry.

Old Fashioned Onion Rings

Reviewed: Aug. 8, 2007
These were SO easy to do and fun to make. My only change: The recipe says to slice the onion rings 1/4" thick. These were too small and were overwhelmed by the batter. When I make them the next time I will slice the onions at least 3/4" thick so they don't get lost.

Zesty Barbeque Marinade

Reviewed: Apr. 30, 2008
I followed the recipe exactly. We also did flat iron steaks and they were terrific. The only thing I will do differently is halve or quarter the recipe - this makes a huge amount of marinade!

Glazed Corned Beef

Reviewed: May 31, 2007
This was surprisingly good. Next time I will do as others have suggested and cook first in the slow cooker and finish with the glaze in the oven. I will make the glaze again with just the carrots - yummy!
