Prairie Meat Loaf

Best meatloaf I've ever had! It kind of fell apart taking it out of the pan but it was amazing to eat!

Banana Prune Muffins

Really like this recipe. It's not that they're not moist but they are a bit rubbery. It may be because I substituted applesauce for the oil but I've done that in many other muffin recipes without any issues. The texture doesn't bother me though and they were great! I highly recommend them!

Wiener Schnitzel

Great recipe! We used crisco vegetable oil and make sure that the veal was "swimming" in it. It seemed to work well and actually did not absorb that much of the oil! Make sure to tenderize it by pounding it to 1/4 of an inch. Not as good as the Schnitzel I had in Austria but it was close!

Banana Banana Bread

This was pretty good, I made it for my students and they seemed to enjoy it a lot! I have my mother's recipe, however, which makes a moister bread.

Sausage Mushroom Quiche

This was a BIG hit at Easter Brunch. Instead of sausage, I used bacon. Nearly a pound of bacon (you can't cook bacon with someone stealing a few slices...) and everything fit will. In addition to the Parmesan cheese in the mixture, I sprinkled some on the bottom. Due to other reviews, I pre-baked the crust for 10 minutes so it wasn't soggy. Seemed to work well!

Ham and Brie Sandwich

I changed it a little, and what I made would have been a 4 and not a 5, but since I "lightened" it, I am sure the original would have been a 5. Yum! I think using SF preserves made it too watery though. Won't do that next time. I also used light butter instead of oil, and didn't have a grill pan so a plain skillet had to do...

Haddock with Citrus Salsa

This recipe was good, however it was a tad spicy. If I were to make this again I would add less crushed red pepper. Also, I felt that the orange overpowered the fish itself so less of that as well.

Was told it was the best pie crust my tasters had ever had! Subbed good butter for the shortening, ended up adding another TBSP of water to form into ball, more flour to roll.

To Die For Blueberry Muffins

This went over very well with the family! Used frozen raspberries rolled in flour as I didn't realize we'd run out of blueberries. Subbed a jumbo egg and coconut oil. Didn't put on all of the crumb topping... It makes A LOT. Also, I hate when muffins stick to liners. Lacking parchment liners, I coated the tins with butter before baking, waited 20 minutes for the muffins to cool once out of the oven and removed carefully.

Chocolate Chip Pumpkin Bread

Healthy Banana Cookies

AMAZING! Switched the dates for craisins. Also added a tsp of cinnamon. I let them sit over night, which enhanced the flavor. Brought them to work and was worried that they'd be "too healthy" tasting for people but, surprisingly, people really enjoyed them! Had numerous people ask for the recipe and were shocked to find there was no sugar or flour in them! Definitely recommend!

Ghirardelli® Dark Chocolate Truffles

These were a huge hit during the Christmas season! I rolled them in coconut flakes, walnuts, and candy cane bits. Everyone had their own favorite! My only note about this recipe is do NOT leave these to cool in the fridge for too long. It says a minimum of 2 hours. I thought this meant I could leave them for any amount of time after that... Apparently 8 hours is too many. The mixture was too hard to work with and I ended up having to re-melt it. Only put it in 2.5 hours the second time around and it was great!

Brooke's Best Bombshell Brownies

Made this for a dinner party-huge hit! I forgot to buy vanilla extract, so scraped out a few inches of a vanilla bean. Also, I used milk chocolate. Everyone really loved them-they were extra gooey, too! Took about 45 minutes.

Cornbread - Healthy!

So yummy! I used honey instead of the agave syrup and used a scone pan that made 8 servings, but followed everything else. They were dense and also filling, unlike a lot of the cornbread mixes you can buy. Much healthier too! They were still moist a few days later. Highly recommend these and will be making them again myself.

Pumpkin Turkey Chili

Great recipe! I put in more peppers and onion than the recipe called for, as well as more chili powder (almost double). I also added a can black beans and a can of corn. The pumpkin made for a creamier chili than usual, which I greatly enjoyed!

Chicken Breasts with Balsamic Vinegar and Garlic

This recipe was fabulous. I really enjoyed the strong balsamic flavor (so if you're not a big balsamic fan, I'd cut it from 1/2 to 1/4 of a cup.) I think when I make it again I'll make it with more sauce; I had put it with fresh pasta and a little more sauce would have covered it more nicely. Overall GREAT recipe, I highly recommend it!
