Easy Oven Brown Rice

Just what I was looking for ... making several freezer meals for a friend and they all called to "serve over rice". With other reviewers mentioning that their rice wasn't done at the 60 minute mark I looked at the ratio of rice/water on my package of rice. Using a 2 water to 1 rice measurement this came out perfect. I will make it next time with half the salt and no butter just to cut sodium and fat but this is perfect as is.

Guinness® and Chocolate Cheesecake

I wrapped the springform pan in foil for the water bath bake. I baked it 45 minutes and it was set up. It is a little to creamy and not as firm as I had hoped but the flavor is wonderful! I made little molded chocolate flowers to garnish (my attempt at clovers did not do the cheesecake justice but would have entertained my guests!).

Horseradish Cream Sauce

I had to do some major adjustments (extra mayo, sugar and honey mustard) to cut the bitterness so I can still serve it to dinner guests. The only thing I can think it might have been is that I used hot horseradish.

MeMe's Pasta Fagioli (Changed Up)

Wonderful soup and even though I changed a couple things it didn't change the base recipe, which is definitely worth this 5 star rating. I did use Spicy V8 as suggested by others plus I added one extra can of cannelloni beans but the biggest change (which again didn't alter the base recipe) was I omitted the ground beef and chunked up some polish sausage that I needed to use up and I used three cheese tortellini I also needed to use up in place of the pasta. I sautéed the sausage and veggies (no added olive oil needed), dumped all but the tortellini in the crockpot on low for 6 hours, added chunked zucchini the last hour, cooked up the tortellini and stirred it all together and served with Parmesan cheese. Can you spell R-A-V-E reviews??? This definitely replaces my other Pasta Fagioli soup recipe!

Granola-Chocolate Cookies

Flavor of these are wonderful but I also found they flattened out a lot. I always use parchment paper so the problem is probably too much butter. I will reduce next time and use butter flavored shortening and see if that helps. I used Maple Nut Granola from this site so didn't add any nuts as called for nor did I put in chocolate chips (would have been overkill with all that was in the granola). I did add 3/4 c of shaved coconut for a bit more crunch. It's definitely a keeper recipe and except for the excessive spreading on the cookies it would be a 5 star.

Maple Pecan Granola

I fell in love with maple granola on a trip to New England but haven't been able to find it in the Northwest so I was really happy to find this recipe. I used pure maple syrup as called for but did substitute coconut oil for the canola oil. Other than that I made as written, including maple flavoring and cinnamon, but since I didn't have pecans I subbed sliced almonds and added flaked coconut and raisins because I like both in my granola. I don't believe these things substantially changes the wonderful maple flavor of this granola. Now the big question - should I keep this to myself or share with DH. LOL

Pumpkin Parfait

After all the reviews I knew to use the large box of instant pudding (I used sugar free); since I was making this for people who are using limited dairy I mixed with 1 cup of fat free milk and 1 cup Cool Whip (no evaporated milk) and pumpkin purée. I also used the full amount of pumpkin pie spice and it wasn't overwhelming at all. I put in parfait glasses and topped with graham cracker crumbs. Nice dessert that keeps well within diet!

Apple Pie Muffins

This is perfect - don't change anything. I got 16 standard size muffins from the recipe. Served the muffins to some incredible cooks and they asked ME for the recipe; now that's success! Just an added note: one large apple = the 2 cups of apples. A definite keeper recipe!

Ninety Minute Cinnamon Rolls

Hit it out of the ballpark with these! Absolutely amazing! I did bake them in a 9x13 @ 350 degrees for 20 minutes and drizzled just a bit of cream cheese frosting on them when they were still warm but even without the frosting these would be wonderful! I made them to the point of putting them in the pan, covered and put in the refrigerator overnight. Took them out for 30 minutes, let them rise for another 15 minutes using the "dough rising" cycle in my oven before baking. The biggest problem I see with this recipe is the addictive nature of the finished product!

My Best Clam Chowder

Two of my adult daughters told me this is their "go to" clam chowder recipe so I decided to try it since DH and I love clam chowder, especially on cold days!This recipe is very close to the one I normally make and is very good but we found it to be a bit too "milky" tasting so I'll go back to my original way of making chowder.

Burrito Pie

This was great and will be part of our menu rotation. I especially like to use recipes that can be frozen for later or shared with friends and family who need an occasional meal. I followed happywife05 review and used more tortillas in the layers and also LISAKP71 review to use taco seasoning in the meat (definitely needed!) and spread the beans on the tortillas instead of blending with meat mixture. Took this to a potluck last night and got rave reviews and recipe requests. Good job KATHICM!

Easy Pumpkin Pie Bars

Oh my ... This was so easy and got rave reviews from everyone! Fair warning: it's addictive so next time I think I'll use nonfat evaporated milk so I don't feel quite as guilty eating it for breakfast! ;). Since I had pumpkin pie spice I used 3 tsps of that in place of other spices but the results would have been the same - DELICIOUS!!
