Maple Pecan Granola

I fell in love with maple granola on a trip to New England but haven't been able to find it in the Northwest so I was really happy to find this recipe. I used pure maple syrup as called for but did substitute coconut oil for the canola oil. Other than that I made as written, including maple flavoring and cinnamon, but since I didn't have pecans I subbed sliced almonds and added flaked coconut and raisins because I like both in my granola. I don't believe these things substantially changes the wonderful maple flavor of this granola. Now the big question - should I keep this to myself or share with DH. LOL

Pumpkin Parfait

After all the reviews I knew to use the large box of instant pudding (I used sugar free); since I was making this for people who are using limited dairy I mixed with 1 cup of fat free milk and 1 cup Cool Whip (no evaporated milk) and pumpkin purée. I also used the full amount of pumpkin pie spice and it wasn't overwhelming at all. I put in parfait glasses and topped with graham cracker crumbs. Nice dessert that keeps well within diet!

Apple Pie Muffins

This is perfect - don't change anything. I got 16 standard size muffins from the recipe. Served the muffins to some incredible cooks and they asked ME for the recipe; now that's success! Just an added note: one large apple = the 2 cups of apples. A definite keeper recipe!

Ninety Minute Cinnamon Rolls

Hit it out of the ballpark with these! Absolutely amazing! I did bake them in a 9x13 @ 350 degrees for 20 minutes and drizzled just a bit of cream cheese frosting on them when they were still warm but even without the frosting these would be wonderful! I made them to the point of putting them in the pan, covered and put in the refrigerator overnight. Took them out for 30 minutes, let them rise for another 15 minutes using the "dough rising" cycle in my oven before baking. The biggest problem I see with this recipe is the addictive nature of the finished product!

My Best Clam Chowder

Two of my adult daughters told me this is their "go to" clam chowder recipe so I decided to try it since DH and I love clam chowder, especially on cold days!This recipe is very close to the one I normally make and is very good but we found it to be a bit too "milky" tasting so I'll go back to my original way of making chowder.

Burrito Pie

This was great and will be part of our menu rotation. I especially like to use recipes that can be frozen for later or shared with friends and family who need an occasional meal. I followed happywife05 review and used more tortillas in the layers and also LISAKP71 review to use taco seasoning in the meat (definitely needed!) and spread the beans on the tortillas instead of blending with meat mixture. Took this to a potluck last night and got rave reviews and recipe requests. Good job KATHICM!

Easy Pumpkin Pie Bars

Oh my ... This was so easy and got rave reviews from everyone! Fair warning: it's addictive so next time I think I'll use nonfat evaporated milk so I don't feel quite as guilty eating it for breakfast! ;). Since I had pumpkin pie spice I used 3 tsps of that in place of other spices but the results would have been the same - DELICIOUS!!

Homesteader Cornbread

I was looking for a "from scratch" cornbread recipe to go with Boilermaker Tailgate Chili for our rainy Sunday dinner. This was just what I was looking for. I'm not sure why I made an full recipe when there's just two of us so I'll freeze leftovers to use for stuffing later.

Blackberry Cobbler II

Best cobbler recipe I've tried and with a berry loving husband plus living in the Northwest with lots of berries available I've tried a lot of different cobbler recipes. Only difference I would do next time is cut back on the sugar a bit (depending on the sweetness of the berries) and definitely double the cobbler topping.

Loaded Vegetarian Quiche

Zucchini is coming in our garden faster than I can keep up so I've been looking specifically for recipes to use up our abundant crop (from 2 plants). This was a wonderful quiche ... I increased the zucchini from 1/2 cup to 1 1/2 cups; I didn't have a green pepper but I did have 3 carrots that needed to be used up. I didn't specify the fat content for milk (i.e., whole milk); I used fat free milk with no problem. Even my husband liked it and he's a "meat and potatoes" kind of guy! Served it with a coleslaw mix tossed with Asian Ginger dressing ... yummy!!

Creamy Chicken and Wild Rice Soup

We had some delicious Creamy Chicken and Wild Rice soup on a recent visit to Michigan and Minnesota area ... this is just the recipe I was looking for!!! Lucky people who live in "Wild Rice" country! I did sub fat free half and half for the cream but it was still very rich and "creamy" and helped our goal of cutting some fat from the diet :-)

World's Best Scones! From Scotland to the Savoy to the U.S.

Perfection! I did add 1 extra tablespoon of butter because I have butter grated and in the freezer in premeasured packages since I make scones every weekend. I used golden raisins and added about 1/3 cup chopped walnuts (preference but would still be "perfect" scones without them). So glad I found this recipe!
