Easy Tuscan Chicken

A family favorite. We had trouble broiling the chicken--the olive oil gets too hot and smoky. I bake the chicken, then put it in the pan with the sauce to simmer.

Spaetzle, Sauerkraut and Sausage Casserole

My husband loves this dish. I buy frozen spaetzle and go easy on the sauerkraut, otherwise it can overwhelm the dish. Between the butter, kielbasa and bacon it can get a bit greasy, but tastes quite good.

Sausage and Bean Ragout

A good, hearty soup. This recipe makes quite a bit, and the pasta and beans in the soup, once frozen, get pretty mushy when reheated. Still a regular on our menu though!

Greek Lamb and Orzo

This is a tasty, easy meal--good for nights you don't have a lot of time to cook. We aren't big lamb eaters, so I use ground turkey instead.
