About this Cook
I'm a busy mom of three. Wish I had more time to cook, since I enjoy it, but the reality of getting food on the table each day makes it more of a chore. I'm always looking for the angle that will yield great results in little time.
My favorite things to cook
I love slow cooking/smoking on the grill (I am an unapologetic carnivore!) That said, I love my fruits and veggies, too! Salads, especially ones that make a meal are a favorite.
My cooking tragedies
The first time I tried to cook a chicken Divan recipe for my husband. It was awful, rubbery, underdone. Yeesh.

Best Ever Sausage with Peppers, Onions, and Beer!
Made this for a family gathering and used water instead of beer, since some folks would have freaked out at the hint of alcohol. Everyone enjoyed it, and next time I'll use beer for sure! Keep in mind that the success of the recipe depends on the quality of sausage you use. If you're lucky enough to live in an area with lots of places that make and sell their own sausage,I suggest that you try those varieties over the mass-produced national brands. Some of the national brands have large amounts of salt, fat and preservatives and if you can avoid some of that, you're ahead of the game!

Ricotta Cheese Pancakes
I liked these, my kids didn't didn't. But then again, I like just about any pancake.

Super Easy Spinach and Red Pepper Salad
My husband & I really enjoyed this! I can see myself using the dressing for other salads, too. I added a crushed clove of garlic to the dressing along with a little pepper. Excellent use of fresh spinach!
