Simple Spinach Lasagna

I followed the recipe exactly, except that I added some ground turkey to the sauce because my husband complains when I make meatless meals. I thought that it was great and I love that there are nutrients from all of the spinach and that the cheese mixture is low fat. Takes a bit of time to make, but we've been able to have letovers for lunch for a few days, so I guess it's worth the time up front.

Valencian Savory Empanadas

Really good and easy, and taste good with all different fillings. Be sure not to fill the empanadas too much, and be careful not to touch the edges with the filling or they will be hard to seal closed.

Best Carrot Cake Ever

I made this for my husband's birthday last year after looking over dozens of carrot cake recipes. I plumped up the raisins in warm orange juice, drained the carrot mixture and added a teaspoon of cloves (I love the smell). It made a huge three layer cake. It was absolutely delicious but so much work that I vowed to only make it once a year.

I following this recipe except that I left out the grapes and nuts. It was delicious and I am sure it would be great with all of the ingredients. Next time I will remember to buy them!

Salsa Chicken

mmmmm!!! So good and easy to make! I used way more taco seasoning than the recipe said, as well as a whole jar of salsa and some chopped olives. The salsa is great because it gives so much flavor and it is vegetables!

A great recipe, and very easy to make. I added olives and sundried tomatoes to give it more flavor. I think it would be too bland without it. I served with chicken in white wine sauce, but next time I think I'll just mix everything together for a one dish meal. My family loved how colorful the dish was!

Chicken Pot Pie IX

A great starter recipe for chicken pot pie. Needs some more seasoning to be perfect, so just add whatever your family likes. I do a lot of fresh ground black pepper, dill, celery seed, and onion salt. It is hard to mess up as long as you follow the basic directions. A lot of reviewers said that the bottom crust was too soggy so they made it more crispy. I didn't do that and I asked my husband about it, and he said that the bottom crust with all the sauce baked in is the best part! I made it a second time for my parents, siblings, and grandma, and they all said it deserved 5 stars. And then made fun of me for taking a picture of it. Well, that's families are for. Anyway, a great recipe!

Roquefort Pear Salad

A great salad!! However, with such a high calorie content I wouldn't make it again for a side salad. Next time I will cook up some chicken and add it so that the salad can be a whole meal.

Pumpkin Maple Pie Supreme

A great recipe! I was worried because I had never made a pumpkin pie before and when I poured the mixture into the tin it looked REALLY watery. It baked up perfectly though, and tastes delicious!

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies are good, but I don't think they are anything special. I like the recipe for "Chewy Chocolate Chip Oatmeal Cookies" a lot more. If your family isn't into oatmeal though, these are quite good cookies.

Chewy Chocolate Chip Oatmeal Cookies

These cookies are great! I've tried using different combinations of nute, chocolate chips, butterscotch chips, and M&Ms and they are all equally fabulous. I didn't have quick oats one of the times so I used plain old-fashioned oatmeal, and it worked fine. I recommend using the changes that other reviews recommend regarding the flour, baking soda, and salt. Also, there is no need to chill your dough unless you melt your butter. The cookies will not spread.

Oatmeal Applesauce Bread

This made a great breakfast bread! I used 2 tablespoons of honey instead of white sugar to make it a little sweeter, and because I don't like to use white sugar, and everyone loved it for breakfast with peanut butter. With my substitution it needed to bake a few minutes longer.

Beer Beef Stew II

A great recipe, but be careful what chili sauce you use! The one I bought was way too hot, and my stew was almost too hot to eat. Quick and easy though, and I think it would have been fabulous if I had made it with some milder sauce. Update: I made again being careful with the hot sauce and I found that a quarter cup of sugar was a bit too much.

White Chocolate Chip Oatmeal Cookies

This recipe was great! I used macadamia nuts instead of pecans because my husband has been bugging me for some white chocolate/macadamia cookies. The only thing was that they took around 16 minutes to bake. I know that the directions say they are best when lightly browned, but they were still dough after only 12 minutes.

Baked Penne with Italian Sausage

A good recipe, but I agree with the other reviewers that spicy sausage is needed to give the dish some kick. Also, I didn't have enough cheese on hand, so I just used about half a cup of mozzarella, and half a cup of Parmesan, and my family (who all LOVE cheese) thought that there was still plenty of cheese flavor. Two cups seems like too much. I also added squash and mushrooms to make it a little healthier.

Curried Coconut Chicken

This recipe turned out very well. I used lite coconut milk instead of regular to save some calories, and my husband said that he wished that the dish had more of a coconut taste, so next time I will use regular coconut milk and just go to the gym that day. :) I served with rice and steamed vegetables and it was a great meal!

Blueberry Lemon Bread

I made this as a dessert, and it turned out wonderfully. I followed the recipe exactly, except that I made a lemon-butter icing which I brushed on right after the bread came out of the oven. This made the top crispy and sweet. This bread was a huge hit, and I have been asked by my family to make it again.
