Grandma's Moist Cake

Really Good! I didn't have self-rising flour so I looked up how to convert All Purpose and I found that for each cup of all-purpose flour, you are supposed to decrease the amount by 2 teaspoons and then add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt. I sifted the flour first (a good tip to make a lighter cake), and once the mixture was the pans I dropped each pan onto the counter a few times to get out the air, and to prevent the dreaded dome shape. These took 25 minutes to finish baking in my oven. They are light and delicious, and a good basic yellow cake recipe for decorating.

Spicy Sweet Potatoes

Delicious! I also added some freshly ground black pepper and cinnamon to the potatoes to give them a little more flavor. Loved the spicy sweet flavor. I cooked them on a baking sheet sprayed with olive oil spray and didn't have any problem with them sticking. Clean up was easy. I will make them again soon!

Hard Chocolate Glaze

It was easy to make, and looked very nice, but I just didn't think it tasted perfect. Next time I will add Vanilla or almond extract to give it a little something extra. It stayed liquid long enough to work with, but set up nicely as soon as I put the cupcakes into the refrigerator.

Cream-Filled Cupcakes

The only changes I made were to use all butter instead of shortening in the filling. I found that it worked best for me to leave the paper cups on the cupcakes while I was filling them, and then remove them to glaze with chocolate glaze so that it ran down the sides a bit. It is too hard to get enough filling in the cupcakes if you just stick a piping tip in them, you need to remove some of the cupcake. A cone shape cut out from the top, and then the bottom of the cone cut away worked best for me. I found that the cut out marks were covered up by the glaze.

Paprika Chicken with Mushrooms

This was delicious, and just what I was craving. I served it over egg noodles and it tasted like Hungarian comfort food. I used way more spice than called for (I always do, I like highly flavored food), and I added white wine to the sauce when I flipped the chicken. After the chicken was cooked through I removed it from the pan and let the mushrooms and onions cook in the uncovered pan for another 10 minutes to let the sauce reduce. YUM!

Cheesy Zucchini Bake

I changed this recipe quite a bit, so maybe I shouldn't be reviewing it, but I think I pretty much stayed true to it's intention. I only used Parmesan cheese, and I used lots of sea salt and pepper and oregano, as well as seasoned bread crumbs to spice it up a bit. Because I didn't use much cheese it didn't stay together at all (maybe next time I'll add a beaten egg?), but it was still very tasty, and a great way to use up these late summer vegetables I have around. All in all, a healthy dish that I would make again.

Macaroon Cheesecake

Thank you for this recipe! I needed a passover dessert, and I loved the idea of a cheesecake with a macaroon crust instead of a graham cracker one. Everyone was so happy to actually get a good Passover dessert instead of a normal matzah meal one! This may become a tradition!

Chocolate Chip Orange Zucchini Bread

So good! I used a half of a cup of packed brown sugar, and only a cup of white. I also used only half of a cup of oil, and used 1/2 of a cup of unsweetened apple sauce. The batter did not rise very much, which is great because I made half of my batter into muffins and filled them almost to the top. The muffins took around 20 minutes to bake. I would recommend using mini-chips because due to the thin batter the regular sized chocolate chips all sank to the bottom. These are absolutely delicious! Still high in calories, but at least I feel like I am getting some nutrients from my treats this way! I am soooo glad my neighbor had too much zucchini!

Spaghetti Carbonara II

Love this dish! I love pasta, and I am always looking for ways to make it that aren't just "pasta with red sauce". The only changes that I made were using only two eggs (I only had two, and other recipes used less eggs so I figured it would be okay), and I replaced the wine with chicken stock. It probably would have been richer without my changes, but it honestly tasted creamy and rich enough. I will make this again and again. It was so filling and delicious, and a great change from the ordinary.

Broccoli with Garlic Butter and Cashews

The flavor of these were really good, but the sauce just sat in the puddle in the bottom of my serving bowl with all of the cashews. Since nuts are so expensive I really wanted them incorporated into the dish. I should have read the other reviews which advise thickening the sauce with cornstarch. I will try this dish again, but if the sauce doesn't thicken up and stick to the brocolli I will try a new recipe!

Roasted Cajun Potatoes

These were fabulous! I don't even normally like potatoes, but my fmily does, and I like spicy food so I gave these a try! Yummy! I added extra garlic and chili powder and made them with small red potatoes and they turned out very crispy and delicious after 45 minutes in the oven.

Basic Crepes

These were great! My husband and I just had the rare treat of being together for lunch time on a weekday, and so I wanted to make something a little more special than just sandwiches. These were great, even with my changes. My microwave was broken so I couldn't melt butter, so I used vegetable oil instead, and I also didn't have normal milk (we drink soy milk), just our coffee half & half so I used 3/4 water and 1/4 half & half. I filled with ham and cheese, and it was a delicious and easy lunch! Thanks for the recipe!

Pasta With Peanut Sauce

A good recipe, but needed some spice. Once we added some hot sauce it was much better. I decreased the peanut butter based on other reviews, and I used a shredded rotisserie chicken to save myself a step. I'll make it again, but I'll remember to add some cayenne pepper or hot sauce to kick it up.

Bread Machine Challah II

This is the best Challah recipe! I had just gotten a bread maker that I wanted to try out so I baked this for Sabbath dinner one night instead of buying our Challah. Three generations of family gave it rave reviews! My cousins were fighting over the last piece! We are Jewish and we eat Challah AT LEAST once a week so we all know good Challah when we taste it! My sister taught me that you know your Challah is cooked completely when it sounds hollow when you knock on it.

The Best Meatloaf

I made this a while ago, it was the first thing I made after I got married and wanted to surprise my husband with dinner, and figured what could be more perfect than meatloaf? Sadly, it turns out that he doesn't like meatloaf (the things you learn, right?), but I thought that it was quite tasty, and both my parents and parents-in-law, ate up all of the leftovers and they all thought it was great! Anyway, the point is that it is easy enough for a VERY novice cook to make, everyone who LIKED meatloaf quite enjoyed it, and it is good the next day as leftovers ESPECIALLY in meatloaf sandwiches.

Cajun Chicken Sandwiches

Loved this recipe! Perfect for summer because I can do the prep work ahead of time and just throw them on the grill right before we are ready to eat, and I never have to heat up the house with the stove or oven! Very tasty and moist! I will be making this chicken recipe for a variety of uses!

Ali's Greek Tortellini Salad

So good! I made a few changes. I caramelized an entire red onion, and added that to the marinating mixture. I left out the eggs, and I added a diced cucumber and pine nuts right before I served it to add some crunch. This makes A LOT. I cut the recipe in half because I was only making it for three people, and I had a lot of leftovers and we usually eat a few portions of salad each. I will make this often! Update-- still tasted good after being in the fridge a few days. I just added fresh spinach to it.

Baked Brie in Puff Pastry

This tasted wonderful, but I had some problems getting the pastry dough to keep together while baking. Now I just make sure to put it seam side down into a small baking dish so that the dough doesn't have room to spread out during baking. Once it has time to set and I remove it, it is perfect.

Caramel Banana Cake Roll

This recipe came out tasting absolutely delicious, but I really didn't understand the rolling the cake in a towel thing. Mine stuck to the towel and became very strangely textured. Maybe I needed more powdered sugar. Next time I will try it with wax paper instead of a towel. I also think that it was PLENTY sweet without the addition of caramel sauce I wish that I hadn't bought a bottle because no one wanted it. I used extra mashed up bananas in the batter because they were so ripe I had to use them up and I am glad I did because it gave the cake a great strong banana flavor. UPDATE: My husband has asked me to make this recipe again about 10 times, before now the only dessert he has asked me to make him more than once is "brownies from the box" I think I have to rate it 5 stars instead of 4 after all!!!

Brazilian Black Bean Stew

So good and so easy to make. I left out the ham and just used extra chorizo turkey sausage because I don't like to cook with pork. It was great the night of, and great to heat up as left overs for days afterwards. I served with hot fresh bread the night of, but later we added leftover brown rice to it and that was extremely good.
