One Bowl Chocolate Cake III

Wonderful cake. I made it in 9X13 pan and it took about 50 minutes to cook. For those of you worried about what type of cocoa powder to use - I used Hersheys and it turned out fine. In my mind that *is* a quality ingredient! Like others I used coffee instead of water - couldn't taste the coffee but the cake was amazing.

Creamed Spinach

I made this for my brothers birthday dinner. He requested cooked spinach as his vegetable. He LOVED this. Really easy to make, and a big crowd pleaser.

Old Fashioned Rhubarb Bread Pudding

Excellent recipe. I didn't use the additional sugar, it was plenty sweet enough with the sweetened condensed milk. I also only used 4 eggs (what I had).

Oatmeal Peanut Butter Cookies

DELICIOUS! I used all butter and added an extra cup of oats. I didn't find them to be too salty with the entire teaspoon of salt. I liked that it made them taste even more peanut buttery. Mine didn't spread very much (without chilling the dough), and tasted better after they had sat a while. IMHO they are best frozen!

Banana Oat Muffins

Great muffins! I was expecting something more hearty, but these baked up really light and fluffy. I stuffed mine with nuts, chopped strawberries, and raisins. They turned out moist and delicious.

Peanut Blossoms II

Very good and very easy. I have no idea how you could make 84 out of this recipe however. I made them fairly small and I only got around 60. Also, I tried some with "hugs" instead of "kisses" and the hugs melt a lot more than the kisses, so I would stick to tradition.

Bundt Dutch Apple Cake

Here's the deal with this recipe. It tastes great, and is easy to put together, but it is pretty difficult to get the middle baked without over baking the outside. I made it twice and the first time the outside was perfect, and the inside was gooey. The second time I baked it for 10 minutes longer and the inside was perfect, but the outside was way too tough.

Tastes just like an almond joy bar! I left out the white sugar because I only had sweetened coconut. Also (IMHO) the salt is crucial!

Wild Rice Casserole II

Pretty good recipe. Definitely takes longer than 30 minutes. At LEAST an hour. I also felt like it needed "something" so I added some Parmesan cheese to the top for the last few minutes of baking.
