Sweet Potato and Apple Soup

Reviewed: Jan. 14, 2011
Just lovely! I served this with my first ever Thanksgiving meal cooked by myself. It was the perfect appetizer and the flavors were awesome. I think I used a little extra cheese on each, but really, who wouldn't?!!

Addictive Sweet Potato Burritos

Reviewed: Jan. 14, 2011
This recipe is a new favorite in our house. One change we did make to make things easier was to 'chop' the beans up in a food processor. Comments to use a fork, potato mashers, etc, were unsuccessful. But the food processor makes them more like refried beans and easier to work with. However, the full recipe makes A LOT of food! I can't stress that enough! One burrito itself is so filling, and 12 is too much to bake at one time. We baked 6 and froze the other 6 in a casserole dish. Following KEANSOR's comment to heat from frozen for 30 in 350 then 15 without foil...ours were frozen solid after half an hour. We kept them for about 50 minutes under foil in the casserole dish, then with no foil for about another 25-30 minutes. Perhaps it just depends on the oven, but ours definitely needed more time.

Veggie Lasagna Florentine

Reviewed: Feb. 7, 2010
This recipe was unreal! It was exactly what we needed for a solid veggie lasagna recipe. The only things I did differently were not cook the noodles (I never do. It's not necessary even if you don't buy the 'no-cook' type) and I used an entire package of Kraft Italiano cheese, and mixed in the parmaesan into that. The package was a little less than it called for but it still tasted terrific! Thanks for the recipe!

Best Chocolate Chip Cookies

Reviewed: Feb. 25, 2009
This was by far the best cookie recipe I have ever made! I omitted the nuts for preference reasons. I used a small scoop to drop little balls onto the sheet and they were perfect! Lets just day that they didn't last long enough! This would be a great recipe to make a double batch of and freeze. They were so soft and chewy that if frozen then taken for a little snack I think they would still triumph!

This recipe is my roommate and I's favorite! The citrus and garlic is an interesting combination that creates a wonderful sauce.
