I think this recipe is awesome!! I've made it several times & do something different each time. For the most part, I use 8 oz cream cheese & a jar of salsa, as I use more chicken than called for (my family loves chicken.) I use black beans w/jalapenos instead of pinto beans. Like others, I also coat the bottom of the dish with enchilada sauce & use the rest of the Large can to cover the top. Doing it this way usually ends up making 12 enchiladas because of more meat. I use 2 baking dishes, a 9 x 13 one (holds 8), and an 8 x 11 one (holds 4). Like I said, these are pretty FAT enchiladas! I, like others, put the cheese on the last 5 minutes.
