Cheezy Potatoes

Reviewed: Oct. 19, 2007
This recipe was really good, almost tasted like my "loaded maashed potatoes. It was great with a few modifications: I peeled my own potatoes instead of using frozen has browns (about 9) and boiled them on the stove in water for about 30-45 minutes. Once they were cooked and drained, I mixed all of the ingredients together and substituted a can of cream of mushroom for cream of potato. I also added bacon bits and salt and pepper to the mixture. I only had to bake them for about 20-25 minutes since the potatoes had been boiled. Really delish! Hope this helps!

Simple BBQ Ribs

Reviewed: Sep. 25, 2007
This is an awesome recipe! They were so easy to make...and so delicious to eat! I Did make a few changes: I boiled for about 2 hours and then cooked in the oven for right at an hour. I also used pork baby back ribs, (Farmer John's) When boiling, I ground pepper and sea salt, and added garlic and onion powder. I did use a lot of seasoning, probably a good 2 or 3 tablespoons of each. I also used a big lobster pot to boil them in. I live in CA but found that the most amazing barbecue sauce to use is Sonny's, which you can order online at their website or if you're lucky enough to be on the East Coast, go right in to the restaurant to get it. I used the sweet sauce, but they also have mild and tangy. Some reviewers basted their ribs many times - I found that I only needed to do that twice. I cooked them in the oven for 45 mins, flipped them, recoated with sauce, and cooked another 15 minutes. This is one of the best rib recipes ever!!!!

Fried Ice Cream

Wonderful recipe! I stuck the frozen ice cream balls on wax paper in my freezer instead of using a cookie sheet, and also substituted frosted flakes for corn flakes....the end result....fabulous!!

Quick and Easy Chicken Noodle Soup

Reviewed: Apr. 28, 2007
Fabulous recipe! It wasn't tons of work, but full of flavor! I made a few minor changes: Doubled the veggies and noodles (since we are HUGE funs of Campbell's Chunky Chicken Noodle Soup), only had 4 cans of chicken broth on hand and ended up using half a can of beef broth....it was great!! I really didn't know how it would taste, but it's awesome! I also used 2 Foster Farms boneless, skinless chicken breasts and sauteed them in some olive oil for a few minutes (the BIG breasts you get from Costco) and tossed them in....the result was great! It had just enough broth, and was chock full of veggies, chicken, and noodles....will definitely make this again!!! (Goodbye Campbell's Chunky!!) Thanks for sharing!

Garlic Chicken Fried Chicken

Reviewed: Apr. 25, 2007
This recipe is simply delicious! Not too overpowering, and just enough room left for me to experiment. This was my first time frying chicken, and I don't think I will be buying anymore KFC! I added garlic salt and onion powder, and a little more of all the other ingredients......the result....fabulous!!! I think next time I'll cut the chicken breasts into strips and use the same flavorings for chicken strips! Yum!

Laurie's Stuffed Peppers

Reviewed: Apr. 17, 2007
Simply Delish! I did make a few modifications: I cooked the bell peppers (I used red, yellow & green) in a big pot of water for about half an hour, added red pepper flakes to the rice mixture, and only used two cans of diced tomatoes for the filling and one can outside in the pan. I also mixed diced green chiles in with that mixture in the pan, and substituted pepper-jack and cheddar cheeses for the asiago....it was FABULOUS!!! I've already got a request to make it again next week!!

Restaurant Style Chicken Nachos

Reviewed: Apr. 10, 2007
Amazing recipe! I cubed the chicken instead of shredding it (just a personal preference) and also added 1/4 of a bag McCormick Mild Taco Seasoning Mix. Jalapeno peppers, diced green chiles, and pepper-jack as well as cheddar cheese completed it! I also warmed the chips prior to baking with the chicken/cheese mixture. I also make my own salsa, and it is a perfect addition to this recipe! Thanks for sharing! Extra Note: The way I make these are for spicy lovers! They are super hot and super good!!!

Chicken Enchiladas I

Reviewed: Mar. 29, 2007
Delicious!! I just began cooking myself, so I also make modifications to recipes as I go to suit our tastes. I used Packerbacker's suggestion and went with green chiles instead of green pepper, added more cayenne and completely omitted the taco sauce. I also added extra cheese but I almost needed two pans! It's a great thing my husband is a big eater and when I make something this good, there aren't any left-overs! The results were fabulous, and this recipe is definitely a keeper!!!
