Lighter Chicken Fettuccine Alfredo

This was very good and a nice change of pace from our usual pasta sauce. I recommend cooking the pasta according to the directions on the box, as 7 minutes was not nearly enough time. With that adjustment, the recipe is a keeper.

Chicken Enchiladas V

This was a very good recipe. I followed the advice of JENNYB5149, as we like things with a kick. I was unable to get the soup that JENNYB5149 recommended, so I used the cream of chicken soup, but I used Mexican blend cheese instead of regular Cheddar. It was very good, but if you're looking for a real kick, I'd recommend doing some additional tweaking.

Slow Cooker Pulled Pork Roast

This was wonderful! I followed the suggestion of many, and I added extra molasses to cut the tang. I used chipotle chili powder and smoked paprika, because that's what I had in the pantry. I made this for a family luncheon, along with coleslaw. Everyone devoured it, and according to my 6 year-old nephew, it was "spot on." It takes a little time to prep, but it's a simple, delicious, and forgiving recipe that afforded me time to spend with my family instead of slaving over a hot stove. The only reason I gave it 4 stars instead of 5 is that it really does need extra molasses to help cut the tang.

Meatloaf with a Ranch Twist

The flavor was great. The whole family loved it. My only complaint is that it is a bit too moist. I made it in a meatloaf pan, so that extra fat could drip from it, but it still fell apart.

Slow Cooker Chicken and Dumplings

This was a very good dish. I sprinkled the chicken with salt and pepper and kept it partially frozen; it was so tender and moist. It is a bit on the dense side, but it is tasty! Plus, it is easy to prepare. I put it all together on my lunch hour and came home to wonderful aromas and a yummy dinner.

Pleasant Pork Chops

The concept of this recipe is great. However, it needs major surgery to make this work. The onion was overpowering; it was the only flavor that we tasted. I would suggest cutting the onion in half, increasing the garlic, and adding some extra spices. As is, I would never make this recipe again, but with some modifications, it would be quite tasty.

Best Peanut Butter Cookies Ever

I made these this morning, without checking to make sure that I had enough sugar. I wound up using 3/4 cup of sugar & 3/4 cup of Splenda. Much to my surprise, they were delicious! They melt in your mouth and have a wonderful peanut butter flavor!! Everyone at work loved them, too. :)
