Oat Applesauce Muffins

I substituted 1/2 cup Raisin Bran Crunch instead of the full cup of oats and added a few extra raisins. I also substituted skim milk for buttermilk. It turned out great!

Sweet Potato Casserole I

Sangria! Sangria!

One of the best Sangria recipes I have ever had. We used sprite instead of soda water to add a little sweetness and used frozen mixed fruit. It is great!

Tex-Mex Chicken and Rice Bake

Needs to cook 55mins or rice is undercooked. I made 1/2 recipe (2 pieces of chicken instead of 4). Added about 1/8 cup water extra and some cheese to rice mix. Then topped the chicken with paprika, ceyanne pepper, salt, pepper and garlic.

Smashed Cauliflower

I read other reviews and agree that it would be too soupy with 3 cups of chicken broth. I used 1.5 cups of broth and just over 1 tablespoon of butter was plenty. Also, I had to substitute mozzarella cheese instead of white cheddar. It tasted great.

Ham Bone Soup
