Even though I have not made this dish for a while, it has become one of my favorites. The first few time I actually measured each ingredient, now I just eyeball it. You must make it with all the recommendations of the other viewers. That is what I did and it was absolutely tasty!
You do not need to bake the chicken separately. What I did was:
I sautéed some garlic and cooked my mushrooms and red peppers, and wilted my spinach in that mixture so it would get the flavor of the garlic. I arranged that in a casserole tray. I then sautéed some onions, more garlic and cooked the chicken. I left the chicken in the pot and made the sauce: with the herbs, soup, lemon juice, parmesan cheese, 2% milk, and salt and pepper.
I then poured the sauce on top of the spinach mixture and let it cook in the oven for 15 minutes. I then added some mozzarella cheese and baked some more and served with white fluffy rice. YUM
