About this Cook
I am a Professional cook who earned her stripes the hard way. My passion for cooking began at the very young age of 4 when my Mother would let me help her in the kitchen. She was of Italian/ Irish descent so I learned how to make raviolis and gnocchis and learned to cook traditional Irish feasts also. My Father was born in Levee, Quebec and he also had a flair for cooking for us on the weekends. He would make fudge for us, there were 5 of us kids. He also taught me the way to cook Sunday roasted dinners as if you were cooking on a wood fire. He would tell us the stories of slowly roasting meats and potatoes and vegetables on a cast iron wood stove. I remembered that through my years and incorporated it into my art of cooking. It is because of him I enjoy cooking anything outside and give me a fire and some wood and a feast will be shared.
My favorite things to cook
Steaks, roast beef tenderloins, steak tips, I know beef is out and chicken is in, but, it is the way I was raised and I love to cook beef. Italian dishes are a favorite, but with homemade pasta. There is nothing like eating a freshly made Ravioli, cooked in homemade broth. Gnocchis are a tremendous amount of work, but well worth the effort. Soups are a favorite of mine and I am always trying to come close to the homemade soups of my Nana or Meme.
My favorite family cooking traditions
I think I answered this question with the one above, Raviolis and Gnocchis. I also love cooking Traditional Thanksgiving or Christmas dinners, which means Turkey and all the trimmings!
My cooking triumphs
Cooking Brunch for over 1800 people with 14 different items on the menu and only a 17 year old dish room person to assist me!
My cooking tragedies
Baking a birthday cake for my brother when I was 12 years old. It was chocolate, his favorite, and mine too! I followed the directions making a red devil chocolate cake with homemade frosting. It was not a success. The cake was flat and gooey and the frosting was worse! This experience soured me on the baking department. My sister Grace loves to bake and does it very well. I can bake now, you have to be precise, but I would rather cook meals!

Broccoli with Rigatoni
I added shredded Parmesan to the top just when it was finished. I put the cover on to let it melt a bit off the heat. Everyone loved it!
