My cooking triumphs
I thought that I could never bake from scratch. I'm a box cake kind of girl. I just recently started making qucik breads and they are so EASY. My favorite so far is zucchini bread with walnuts and dried cranberries. I will next try banana bread and peanut butter cookies.

Flounder Mediterranean
I enjoyed this recipe very much. I did make a few changes. I used dice canned tomatoes as it was easier than using fresh tomatoes. I also used tilapia instead of flounder, I prefer the taste of tilapia over flounder. I cooked this fish and sauce separately, so that I would not over cook the fish. Lastly, I did not add white wine, since I did not have any on hand. I serve this with kale and rice. It re-heats well the next day.

Curried Tilapia with Mango Salsa
The tilapia did have much flavor. Next Time I make this, I will rub the curry powder and salt on the tilapia at least 4 hrs before I make the dish. Hopefully this will make the tilapia have more flavor

Easy Guacamole
These were good. Like another reviewer, I also used black beans. I also added fresh made guacamole and salsa. These will be made again
