Shrimp Scampi on Lemony Angel Hair Pasta

I am rating the shrimp and not the pasta. Due to dietary restrictions I had to make this change. Please don't hate me for reviewing anyway. This was delicious! I had to change the procedure a little and add the crushed red pepper at the beginning and the wine towards the end. I omitted the butter because without the pasta, it wasn't necessary. I doubled the lemon juice as noted in the parenthesis and left the zest at one lemon. I did add a pinch of paprika for color. I simply served with salad and it was fantastic. I will make this again.

Shrimp and Grits on the Barbie

This was very easy to prepare and was very tasty. The only thing I will do different next time is add some diced jalapeño to spice it up a bit.

Amy's Barbecue Chicken Salad

The salad itself is beautiful! The dressing color is a little off putting to us and the taste was just ok. I followed the recipe except for subbing romaine lettuce. Neither my husband or I finished our salad. I kept thinking lime juice would have been a better dressing. Everyone has their own taste. BBQ ranch dressing sounded so good to me but I learned I am not a fan. If you know you like it, go for it!

Sunshine Muffins (with whole orange)

This recipe was perfect for using up the oranges I had hanging around the kitchen. Sunshine is the perfect adjective to describe these delicious muffins. They have a robust orange flavor due to the whole orange peel and all going into the blender. I used Craisins and fresh squeezed orange juice. Sad to say I didn't have any nuts on hand and while the muffins taste good without them, pecans would send them over the top!

Coriander (cilantro) Steak Marinade

This smelled so good while it was cooking! Our mouths were watering and it did not disappoint! I used ground coriander seed because that is what I had on hand. Our sirloin turned out very tender and the flavor permeated through the steak.

Diet Friendly Heath Bar Cake

I made this recipe as stated and it tasted good but the texture was not appealing to me. The cake, pudding, and whipped topping were all just soft. Might be because my cake was really fresh. This was easily fixed by freezing the dessert. It is delicious frozen. Whether you eat is as is or freeze it, this dessert delivers the taste of something sweet without a ton of calories.

Fluffy and Delicious Pancakes

I made these as stated, including the optional cinnamon and vanilla. I'm not a huge pancake fan but I thought they were delicious. My husband and son love pancakes and they thought they were o.k. but they requested no cinnamon and vanilla next time. I gave this four stars because when you do add the cinnamon it makes the pancakes a very unappealing color. I was afraid my family would not even try them. Thankfully they gave them a go.

Pork Chop Potato Casserole

This is a nice comforting casserole. I had to use cream of mushroom soup and potato slices because that is what I had. I had boneless pork chops that were on the thin side. They ended up a little tough. Next time I will use thicker chops.

Jalapeno Cheese Bread

This bread smelled absolutely amazing while it was baking. I was a little disappointed that the bread was milder tasting than I expected but that can vary due to the heat of the peppers and personal taste so I'm not knocking a star off for that. My problem was that I followed the recipe exactly but experienced a little trouble. With only 7 cups of flour and none extra added during kneading, my dough was a little dry. I had to add more water. Then when baking, I think mine would have been ready at 40 minutes. I was trying to follow the instructions. Finally at 45 minutes I pulled it out. The outside was crunchy. Normally things cook in my oven at the recommended time so not sure what was up with this. Regardless, the bread has a great texture! It is a sturdy bread but soft except for my crunchy outside. Next time I will up the peppers and cut back on the sugar just a little bit. I used half shredded mild cheddar and half sharp diced cheddar. Next time I will use all sharp diced I think.

Chinese Lion's Head Soup

I have been wanting to try this for a while and I'm so glad that I finally did! It is delicious. I accidentally put the sesame oil in the meat mixture. I went ahead and added some to the broth at the end too. It was perfect so I will do that again next time. After putting it all together, there did not seem to be enough broth. I added 4 more cups and that seemed to be more to our liking. The fresh ginger is a prominent taste and I love that about this soup.

Zucchini Alfredo

This is unlike anything I have ever tried before. I was tempted to change things up after reading the reviews but I wanted to try it as is the first time. I followed the direction exactly and I added the optional parmesan cheese on top. After tasting the finished product, I had to agree that it was a little bland for my taste. I sprinkled in a little bit of onion powder and a tiny bit of granulated garlic. I used about 1/4 tsp. of each. It was really good. I served this as a side dish and served it over the egg noodles as stated. The fresh basil adds a delicious touch. If you don't have fresh basil, I don't think dried would have enough of a punch in this dish. Thanks for sharing this unique dish.

Low Fat Zesty Baked Chicken

These chicken strip are delicious! I adapted it to my toaster oven since it is 100 degrees here and I can't make myself use the real thing. If anyone else wants to do this, bake 10 minutes and flip over. Then cook another 10 minutes. I did not have parchment paper but it did not stick thankfully! I made the first dip but not the honey mustard dip. This was just due to personal taste because none of us like honey mustard. The first dip was good but I don't think I will make it again. The chicken tastes great by itself so no dip needed for me. I used freshly grated parmesan. The parmesan taste is rather strong so if you don't like that, this recipe might not be for you. So glad to add this recipe to my regular rotation!

Chicken Delicious

This just did not taste good to us. The chicken came out moist but the flavor was not good. My husband asked me if my chicken tasted like tuna. It sort of did! The sauce was much thinner than I imagined and we did not care for the flavor of it. I had to promise to never make it again.

Extra-Lemony Lemon Cupcakes with Lemon Glaze

I made this exactly as written and it has a wonderfully strong lemon taste. Most lemon recipes I have tried aren't tangy enough for me but this one was perfect. The batter seemed a little thick to me and I was afraid they might be more like muffins. I was wrong! They turned out light and moist. I used two individual pouches of Crystal Light lemonade mix for the lemonade powder. It measured to just under 1 TBS. of powder. Thanks for sharing!

This recipe worked fine. It rose up and it was not dry. Something about it just wasn't what we were looking for. I think it is just a matter of taste. My husband and I both rated it 3. Our son gave it a 7.

Tasty Lentil Tacos

This recipe is easy to make and tastes good. I had it as is and loved it. I was afraid my husband and son would not eat it without meat so I threw a pound of ground turkey into a double batch. I fooled my husband who thinks he hates lentils. He said they were really good. Of course he still doesn't know he had lentils. Our son took one bite and then refused anymore but he thought it was the turkey meat that made them tast "funny". Next time I'm doing it with no meat. I think this would be great for enchiladas as well.
