Slow Cooker Carnitas

I adjusted this recipe to my own taste, and it was delicious. I substituted chili powder for the coriander and used fresh garlic instead of powder. I rubbed my pork roast with the dry ingredients and let it sit overnight in the fridge, then put it in the slow cooker the next day. After shredding the meat, I put it under the broiler until it crisped up the edges a little. I reserved some of the juices to keep the meat moist after broiling it. Yummy in tacos with some lime, cilatro, and cheese!

Cream Cheese Pound Cake III

The flavors were good, but my pound cake practically burned on the outside while still being partly raw on the inside. I would recommend starting this in a cold oven, and lowering the temperature.

Honey Chicken Stir-Fry

This is really fresh and healthy. I skip the rice, just to save calories. At the end, I added a tiny bit more soy and honey. Delicious, and a great base recipe to add other flavors to. I might add more garlic and maybe a little ground ginger and chili flakes to the next batch.

Caramel Macchiato Ice Cream

I loved this ice cream, but For some reason my ice cream stayed super soft even after being in the freezer for a long time. the caramel sunk to the bottom, but next time I'd leave the caramel out just because the ice cream alone is soooooo good.

Easy Mint Chocolate Chip Ice Cream

This is a really delicious ice cream recipe. I think I might toss my mini chocolate chips in the food processor first so they are slightly smaller chips. I will soooo be making this again:)

Original Homemade Italian Beef

I wanted to love this recipe, I've been dying to make it for awhile. Unfortunately, I don't think the flavors worked very well together. I want to play around with the idea of this recipe though, I think it could be a wonderful dish.

Easy, Eggless Strawberry Ice Cream

This is wonderful with fresh smashed strawberries. I think next time I might puree the strawberries and strain the seeds before adding to the mixture. Tastes fantastic

The Whole Jar of Peanut Butter Cookies

Best peanut butter cookies I've ever had. I baked mine for 10 minutes and 30 seconds, put in the cookie jar while they were still slightly warm so that they would stay soft and chewy. Yummy recipe

Shrimp Linguine

This is wonderful. Based on my personal preferences, I substitued fresh italian parsley for the basil. I also sauteed the herbs and garlic in bacon grease instead of olive oil, and also cooked fresh shrimp in bacon grease first. Used Angel hair pasta. If you are concerned about the sauce looking thin, don't worry because if you toss it with the pasta and let it sit a few minutes, it will absorb into the pasta. Delicious recipe!

Overnight Coffee Cake

Everyone at work loves it when I bring this in. I reduced the nutmeg to 1/4 tsp, and I add 1 tsp cinnamon to the cake batter. I also add 1/2 tsp vanilla to the icing. Awesome flavors!!

Ham N Cheese Potato Bake

My boyfriend loved this dish! I decided to only add the can of cheddar soup, no potato soup. I also added some crumbled bacon on top of the casserole before baking it. Great recipe, I think next time I will add a dash of hot sauce to the soup mix for some extra flavor

the first time I made this I used all semi-sweet chocolate chips, and the texture was very soft. This time I doubled the amount of chips and again used all semi-sweet, I thought the texture was much better. Yum

Buttermilk Pound Cake II

this was my first time baking a pound cake, and I loved it. I creamed the butter and sugar together in my stand mixer for 5 minutes until it was nice and fluffy. I took the advice of some of the reviews and replaced the lemon extract with the zest and juice of one lemon, it gives the cake such a bright flavor. I made an icing with powdered sugar and fresh lemon juice and drizzled over the top. Delicious!
