Barbecue Chicken Casserole

Recently, I prepared this recipe for my sister's family. I assembled everything (adding a bit of clove and cinnamon to the sauce) and froze it. I was not there when the meal was cooked and served but it received rave reviews!

Best Beef Stroganoff

This was easy and quite tasty. I reduced the onions to only half an onion and it was perfect. In the future I will substitute a potent beef broth for the consomme. I read the ingredients of Campbell's Beef Consomme and there is nothing mmm mmm good about it!

Ibby's Pumpkin Mushroom Stuffing

I really enjoyed this recipe. I had to omit the onions per my guests request and it was still wonderful. Next time I will make smaller bread cubes though. I had made the cubes the size of croutons and could have gone smaller. I'm so happy I found this recipe!

Texas Chocolate Cake

This recipe came from my former mother-in-law. It is by far the most delicious Texas Sheet Cake I have ever tried. Sometimes I add a little cinnamon to the frosting because I love cinnamon. Also, I like to use pecans in the frosting and cycle them through the food processor first to make them less chunky in the frosting.

Citrus Swordfish With Citrus Salsa

We made this last night. My boyfriend did the marinade while I made the salsa. Then, while he grilled the swordfish, I made Caribbean Rice (a recipe I just submitted this morning) and broiled zucchini slices. This was a fabulous meal! Our guests really liked it too!

Addictive Sweet Potato Burritos

After reading the reviews, I decided to make this for my sister's family to freeze and serve later. I used black beans instead of kidney beans and added a bit of cinnamon, clove and a touch of brown sugar to cancel the bitterness of the beans. I also added silken tofu to the mashed sweet potatoes (for extra protein). This made ten burritos. Everyone LOVED these! No one could tell there was tofu in it and my sister has begged me to make it again when I visit. Next time, I will try them myself!
