After reading the reviews, I decided to make this for my sister's family to freeze and serve later. I used black beans instead of kidney beans and added a bit of cinnamon, clove and a touch of brown sugar to cancel the bitterness of the beans. I also added silken tofu to the mashed sweet potatoes (for extra protein). This made ten burritos. Everyone LOVED these! No one could tell there was tofu in it and my sister has begged me to make it again when I visit. Next time, I will try them myself!
