Anniversary Chicken I

Reviewed: Feb. 27, 2010
This was very good! This has been waiting to be tried in my recipe box for so long! But I was always so hesitant to make it because I just couldnt think of eating a mixute of teriyaki and ranch cheese and bacon...It just seemed a little unusual...BUT i finally did! And we all loved it! I sauteed in pan and mixed together teriyaki and ranch and poured over the top in a baking dish. I then topped with cheese, bacon and green onion....SOOOOOO good and tender. It made the bottom of the baking dish a little watery but overal it was good!

Simple Carnitas

Reviewed: Nov. 5, 2009
Very Good, made twice, and I liked it better in the slow cooker!! Plus dont trim the fat, because it gives it such an awesome authentic flavor that is carnitas signature trait. I also seared the roast on all sides before putting in the slow cooker for more flavor...I only used half the orange, squeezed the juice, and left the peels in there. I didnt put it in there in chunks either, I just let it cook on low for about 10hrs and shredded it, removed the large pieces of orange, and onion, and returned to the juices before serving.....Very good.thx!

Artichoke and Sun-Dried Tomato Chicken

Reviewed: Oct. 16, 2009
This is how I turned this bland dish FABULOUS! Ok, I seasoned the chicken with salt, pepper, garlic powder, then browned in olive oil, removed from pan, and added chopped onion, garlic, and sauteed. then added the REG diced tomatoes, with a tbs of italian seasonings, and salt pepper, crushed red pepper, and some sugar. I added chopped artichokes, NOT the marinated, and the pesto, AND some chopped sundried tomatoes. I added the chicken back to the pan and let simmer until cooked through on LOW. Meanwhile I cooked angel hair pasta to go along with it. Served the chicken and sauce on top of a bed of pasta, with garlic bread YUMMY!!!!

Burrito Pie

Reviewed: Oct. 11, 2009
OK, I read all these negative reviews before Making this. To eliminate the "mushy" texture I didnt add refried beans to the mixture. I simply bought two small cans of pinto beans, rinsed and cooked them with salt, pepper, garlic powder, and chili powder, and added the can of diced chiles with them, and a little water. Once boiling I smashed them and smeared them on the tortillas. I doubled the layer of tortillas so the tortillas wouldnt end up a mushy mess. I also used a cheesecake pan. I added a lot of seasoning to the ground beef, like garlic powder, onion powder, oregano, chili powder, cumin. I drained the canned tomatoes well before adding. I just added chopped jalapeno for heat when I was cookin the onion. I added MORE cheese. In between the layers. I mixed half a small can of enchilada sauce with half the bottle of taco sauce, BIG DIFFERENCE. i poured the taco sauce in the layers instead of mixing with the meat. It came out way better this way, and we topped with sour cream, lettuce, and guacamole!!!

Cookies 'n Cream Cake

Reviewed: Oct. 6, 2009
OMG, this cake was awesome....I used pillsbury moist white cake mix, and just followed the directions of the cake mix, not the egg white version. I probably added about a cup of crushed cookies. I didnt make the homeade frosting, I just used a can of whipped cream cheese frosting and crushed some cookies on top. IT WAS A BIG HIT. This will be a regular. Thanks!

Banana Pudding IV

Reviewed: May 14, 2009
Ive always enjoyed eating this dish, but never made it myself. So when I looked it up, and found this recipe, I thought the ingredients were wierd, but MAN was it good!!!! I used one 5oz package of banana cream pudding, and used low fat milk for the milk. I followed the recipe as is, but used the banana cream pudding instead. I also didnt need 4 bananas, but mine were big so i only needed 3. I also crushed some extra cookies on the top and it looked pretty. I made it for a family bbq, and they loved it! I know this will be asked for lots of time, thanks!

Fresh Pumpkin Pie

Reviewed: Nov. 26, 2008
WOW, i was hesitant to try this recipe, but im soooo glad that i did. I did one fresh and one with canned pumpkin puree. Not much of a difference, so dont worry if you dont want to do fresh, it still comes out absolutely delicious! I loved this recipe thank you!

French Dip Sandwiches

Reviewed: Oct. 20, 2008
This definately deserves a 5 star! It was fabulous! I followed recipe exactly except that i used low sodium soy sauce, cuz thats all i buy. Oh and I added a little water to make more au jus. SOO good, after 6 hours on low, i removed the tri tip, and sliced thin instead of shreading, Worked fabulous and the au jus was delicious!

Gourmet Thai Chicken Pizza

Reviewed: Oct. 17, 2008
THis was pretty good, I didnt make the pizza crust, I used boboli, since i had no time, but followed the recipe exactly other than that. However i didnt have chili oil, but thanks to my AR foodie friends from the exchange, i was able to make some. It definately is a great addition to this pizza. This is actually my first time trying something "thai style" and I was happy with it. It was different than what im used to, but it was good

Tomatoed Pork

Reviewed: Oct. 16, 2008
This is very similar to the dish we've been making in our family for years, I know ppl hate when otheres do this, but i didnt follow exactly. But then i rarely follow a recipe exactly. THe way i made this is, with the cut pork i placed in a saucepan, slightly covered with water, and simmered with salt until all water evaporated(it makes the pork more tender) Once all evaporated I added veg oil, onion and jalapeno(with seeds cuz we like it hot) and salt pepper, garlic powder, cumin, oregano. let fry until browned, I added 2 small roma tomatoes coarsely chopped and about 1/4 cup of tomato sauce(im sure it would work great with the diced tomatoes like the recipe calls for, I just didnt have any) I let cook until tomatoes were tender, I added about 1/4 -1/2 cup of water, and let simmer together. I didnt add mushrooms because my husband doesnt like them, but it sure sounds good though.

Pumpkin Spice Latte

Reviewed: Oct. 16, 2008
This is pretty good, i did use pumpkin pie spice instead of pureed pumpkin, that is what the submitter suggested if u dont wanna use the puree. I just added it to the milk with sugar and heated, then removed from heat and added a bit of vanilla. I then topped the espresso with it. Really good

S'mores Bars

Reviewed: Oct. 13, 2008
My expectations were way higher for these than what the results were. They werent that great actually. The top was just sticky and kinda hard, Really hard to get outta the pan from the sides, and I greased well. I think that with the crunch from the bottom with the graham crackers and the sticky "hardish" top from the marshmellows didnt work well. It was just not as fun to eat as watching them cook. But i might mess around with it a little.

Awesome Slow Cooker Pot Roast

Reviewed: Oct. 9, 2008
This was pretty good, but I really feel the onion soup overpowers it so much. If i make this again, i will only used maybe half if not less of the onion soup. I used a 2 1/2 pound tri tip and and 1 can of mushroom soup. I felt it needed salt though, but it did make a nice gravy. overall ok

Better Than Brad Pitt Cake

Reviewed: Oct. 6, 2008
AWESOME cake. I really enjoyed this, even though it is really rich and decadent...i only changed the cake from yellow to butter because thats what i had, and i used one instant vanilla with one white chocolate. DO NOT SKIP THE TOASTED COCONUT, it is soooo good on this cake. I loved it, is it better than brad pitt??? It gave him a run for his money, but i will always be weak for brad!

Spicy Garlic Lime Chicken

Reviewed: Sep. 30, 2008
This is a wonderful recipe. I added just a little more cayenne because we are a spicy family....anywho, i used thick chicken breast, so i cooked covered until cooked through to avoid the outside getting browned to fast, then uncovered and let brown. Careful, this chicken can easily go from nicely browned to blackened because of the seasonings so watch toward the end. The lime was a great touch, thanks for the recipe!

Thyme-Rubbed Steaks with Sauteed Mushrooms

Reviewed: Sep. 29, 2008
This was very good, im not giving a five star though because I strongly feel that any "sauce" that is intended for the top of steaks should be cooked after the steak is done in the wonderful brown bits in the pan. Thats what i did, after cooking the steak i removed, let rest, added onion and mushrooms, red wine, salt, pepper, and at the end tablespoon of butter. Great on top of the steak. I served the whole thing on top of soft polenta. really good.

Chicken and Corn Chili

Reviewed: Sep. 28, 2008
this was ok for me, maybe because i didnt use salsa. I used rotel. I just thought it was lacking. I used 2 large chicken breast cut in to small cubes. 1 can of pinto, 1 can of black beans. I added 1/2 yellow onion chopped. I added some tomato sauce and water. I also added chili powder, garlic powder, oregano, and cumin. At the end i added some masa harina. We enjoyed it for the football game, but I dont think it made a big enough impression on us to repeat this recipe.

Sweet and Sour Chicken III

Reviewed: Sep. 27, 2008
this was absolutely delicious! I added carrots and green onion and yellow onion, seseme oil, and used frozen breaded chicken tenderloins. I just baked them, chopped them and added them to the cooked sauce! WONDERFUL, i didnt really need to thicken it up either because the breading did that. It was great. I added just a little ketchup just like others suggested.. GREAT recipe, keeper!
