Roasted Garlic Cauliflower

Boiled Raisin Cake I

It is a very light, butterless, eggless, milkless cake but it does need improvment. Next time I will reduce sugar (half of it would be OK) and double the spices. I will also use a bigger baking pan. My cake was too thick and moist, even after an hour baking.

Christmas Cake

The only difficulty is to gather all the ingredients. Apart from this, it's an easy, full of flavor recipe, very suitable for Christmas present. It makes 3 medium-sized cakes.

Mini Corn Dogs

These mini corn dogs are very good for parties. I also used other fillings e.g. kalamata olives, cheddar cheese cut into cubes… They were all great! But the recipe needs some adjustments. I cut the milk to 2/3 of a cup (about 150 ml) and used only the egg white to brush the corn dogs. For the sauce I mixed equal parts of prepared mustard, ketchup and mayonnaise.

Vegan Chocolate Cake

Although I increased the cocoa powder to ½ cup as others suggested, I definitely believe this is a 5 star recipe. The cake wasn’t dry at all! On the contrary it was soft and moist both the first and the second day. Unfortunately, there wasn’t any left the third day.

Quiche Lorraine I

I prepared this for dinner and it was gobbled in a few minutes. I made a few changes, though. I used 3 eggs and only 1 cup of heavy cream. No sugar, no onion. Next time I will have a prebaked crust pie, because my quiche came out a little bit soggy.

Quick Butter Croissants

To make the whole proccess “quick” put the dough in the deep freezer for 30 minutes, as others suggested. To make the dough workable add ½ cup of flour. Fill the triangles with 2-3 pieces of dark chocolate. Delicious!

Whole Wheat Honey Bread

I replaced half water with fresh milk, since I didn't have any milk powder. I experimented with different amounts of honey. 2 tbs is the best. A delicious whole wheat bread. Not heavy at all.

Cheddar Biscuit Cups

The minute my picky niece saw the biscuits, she exclaimed “I don’t like these biscuits”. Alas! In five minutes, after being persuaded just to taste them, she was impatiently asking for a second batch. I used feta cheese instead and also added a pinch of pepper and ½ teaspoon oregano. So easy!!!

Spinach Brownies

It tastes like spinach-cheese pie plus it is super-easy to prepare. I used shredded feta cheese and I sauted the onions like others recommended. It was a delicious treat for my cocktail party.

Chicken Nuggets

Finally I know what to cook when my family asks for chicken nuggets. What’s more these are healthier since they are not fried but baked. For an even lighter dish replace butter with a couple of beaten eggs. I have tried the same recipe with drumsticks. I have just increased baking time to 35-40 minutes. YUMMY!

Bread Machine Swedish Coffee Bread

I have tried to make cardamom bread (we call it tsoureki in Greece) with the bread machine before, but all my efforts ended in failure. This one turned out to be great. The bread rose and its texture was so soft. I do believe though that 3 teaspoons of cardamom are too much. I used half the quantity and next time I’ll use even less. I also increased baking time to forty minutes.
