Flax and Sunflower Seed Bread

Delicious! I couldn't believe that such a bread came out of my bread machine. I made a few changes, though. I added a couple of tablespoons of whole wheat and I reduced the quantity of seeds to half, only to replace it with sesame seeds and oat flakes. I may try the recipe with a little more salt next time. I definitely won't buy a multi grain bread again from the baker's.

Mini Parmesan Scones

I think my scones were just OK. Nothing fantastic or extraordinary. There was just a hint of cheese flavour and they weren't that fluffy either. Maybe my self-rising flour wasn't strong enough. Anyway I'll give it a second shot.

Rum Raisin Bread

Definitely the best Raisin Bread. So moist and what a rum flavour! I didn't have any milk powder or whipping cream, so I used 2 tablespoons of plain yoghurt instead.

Beth's Spicy Oatmeal Raisin Cookies

Though oats are not that popular in my country, Greece, they have just gained some new fanatics. Everybody who has tried Beth’s cookies just got crazy. My sister, my mother and 2 of my colleagues have asked me for the recipe.

POM Chocolate Covered Arils

Juicy, easy-to-make chocolates. I added a tablespoon of margarine and a couple of tablespoons of milk to the melted chocolate in order to make it softer. Be sure to form small clusters.

Lobster Mornay Sauce

I prepared the dish for dinner at my wedding anniversary. It was good but I would like the lobster flavour to be more overwhelming. In conclusion, the sauce by itself was very tasty, that any kind of shellfish or even poultry used would be good.

Cheddar Biscuit Cups

The minute my picky niece saw the biscuits, she exclaimed “I don’t like these biscuits”. Alas! In five minutes, after being persuaded just to taste them, she was impatiently asking for a second batch. I used feta cheese instead and also added a pinch of pepper and ½ teaspoon oregano. So easy!!!

White Bread For The Bread Machine

I too, reduced sugar to 2 tablespoons and substituted 30g of bran for 30g of flour to give extra flavour and colour. So soft and easy!

Naan

Although I have never eaten naan in my life I really appreciated what came out of my grill. They tasted just like pita bread. I served them with souvlaki and tzatziki, quite a typical Greek dish, and were better and less greasy than the ones sold around my country. I kept some in a plastic bag and even the next day after micro waving them for a few seconds, they were soft and tender.

Bread Machine Swedish Coffee Bread

I have tried to make cardamom bread (we call it tsoureki in Greece) with the bread machine before, but all my efforts ended in failure. This one turned out to be great. The bread rose and its texture was so soft. I do believe though that 3 teaspoons of cardamom are too much. I used half the quantity and next time I’ll use even less. I also increased baking time to forty minutes.

Chicken Nuggets

Finally I know what to cook when my family asks for chicken nuggets. What’s more these are healthier since they are not fried but baked. For an even lighter dish replace butter with a couple of beaten eggs. I have tried the same recipe with drumsticks. I have just increased baking time to 35-40 minutes. YUMMY!

Vegan Chocolate Cake

Although I increased the cocoa powder to ½ cup as others suggested, I definitely believe this is a 5 star recipe. The cake wasn’t dry at all! On the contrary it was soft and moist both the first and the second day. Unfortunately, there wasn’t any left the third day.

Spinach Brownies

It tastes like spinach-cheese pie plus it is super-easy to prepare. I used shredded feta cheese and I sauted the onions like others recommended. It was a delicious treat for my cocktail party.

Mini Corn Dogs

These mini corn dogs are very good for parties. I also used other fillings e.g. kalamata olives, cheddar cheese cut into cubes… They were all great! But the recipe needs some adjustments. I cut the milk to 2/3 of a cup (about 150 ml) and used only the egg white to brush the corn dogs. For the sauce I mixed equal parts of prepared mustard, ketchup and mayonnaise.

Whole Wheat Honey Bread

I replaced half water with fresh milk, since I didn't have any milk powder. I experimented with different amounts of honey. 2 tbs is the best. A delicious whole wheat bread. Not heavy at all.
