Chicken Cordon Bleu II

YUM!! I made the recipe just as it said and it was a big hit with company! The sauce is really great over polenta or mashed potatoes.

Fig and Lemon Chicken

Yum! This was super easy to make and it came out beautifully! I used some leftover figs that I had on hand which was less than what it called for so I cut them in half and there was plenty for our taste. I used chicken thighs with bone-in and skin on and it was really tender.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Yum! My husband was sceptical because of the wheat germ and whole wheat flour but he ate them up! Much better than any store bought mix I've tried and very easy to make. I took the advice of other reviewers and did half baking soda and half baking powder. We will definitely make this our primary pancake recipe.

Baked Rice (Ross Fil-Forn)

I had to make a few modifications to this recipe because I didn't have everything on hand. I did not have canned tomatoes so I used some fresh ones that came from a friends garden (along with some salt) and I think that helped with flavor. I also added about a teaspoon of marjoram and a teaspoon of crushed italian seasoning to the ground beef while it cooked and I think that it could have used even a bit more of the marjoram. I didn't have chicken broth so used beef and I think that it worked out just fine. The dish wasn't robust with flavor but was a good comfort dish and would be good as a stuffing for peppers or mushrooms.

Baked French Toast

OMG!! This was SO yummy! I made a dish of it camping and it was a huge hit! I used a whole loaf of raisin pecan french bread from Safeway but halved the rest of the recipe because I was worried about it being soggy but I think that next time I will use the recipe as listed because the egg mixture made a wonderful custard like substance at the bottom and there just wasn't enough of it!

Danish Potato Soup

Unbelievable Spinach Calzones

I did not have frozen dough so I used Pillsbery pizza dough which was quick and easy. I covered the calzones with tin foil for the first 15 min so that they would not get too brown and I cooked Italian pork sausage with chopped onion and then added it to the stuffing for more flavor. I served them with spaghetti sauce on the side for dipping and they were a hit!

Fabulous Fajitas

I used beef instead of chicken and they were great! I used a little of the seasoning package to mix in with sour cream and spread it on some warm whole wheat pitas served with the fajita mix, avocado, shredded cheddar and mixed greens and made a fajita pita. This is definitely something that we will make again!
