Pollo (Chicken) Fricassee from Puerto Rico

Very soupy and not appealing. Hubby liked it, but the kids and I thought it was bland as is. IF i make this again, there will be LOTS of adjustments.

Shredded Brussels Sprouts

This was a HUGE hit with my family. My kids have never shied away from vegetables, but brussel sprouts were my son's arch nemisis! lol! But he loved it! And my 3yr old finished her whole plate! This will def be a weekly thing in our house. Especially since we started following the Paleo Diet.

Brazilian Fish Stew

LOVE this! My family (including an 8yr & 3yr old) loves it as well! I've made no changes the first time, however found myself with no canned tomatoes, so I chopped up 3 vine-riped tomatoes and it came out perfect! Will double next time for left overs. And unlike other reviews, I used the tilapia both times and it was perfect!

Baked Spaghetti Squash Lasagna Style

We've never had squash before. My hubby, not the kids, is a picky eater, but we all loved it! The only thing I did was I used my normal home-made tomato sauce. The cooking time for the squash was way off for me. It took me twice as long, so plan accordingly. I ended up having to make something else for dinner that night due to this, but continued to make it and stored it in the fridge for the following night. I also skipped making it in the shells. I threw the squash in a 9x13 dish, threw on the sauce, then topped it with the cheese. Wonderful! A new staple in this house!

Seafood Quiche

Too runny. Decrease the milk/cream. Also, if using a frozen crust, I suggest pre-baking a bit. The bottom was a bit soggy, but that could be remedied if using less milk/cream. I don't know. Didn't use seafood, so can't commet on that. I used bacon, and asparagus. Flavors were good, but texture --!

Frogmore Stew

My husband was very skeptical of this recipe. He's not a man to try new things and kept avoiding it, by getting Taco Bell and the such, but I told him that I wanted to try it and I made it and he knows the rules, you have to try it before you say that you don't like it. (The rule was made for my son.) AND HE LOVED IT! It is going to be a regular at my house now. I cut the recipe by half though. 12 servings is just too much for my house. Excellent!!!
