Oat Applesauce Muffins

These are great and very low calorie! The first time I made them I used quick oats and soaked them for an hour, which made them completely unnoticeable. We were disappointed that they weren’t more “oaty". So the next time I used old-fashioned oats and only soaked them as long as it took me to get the rest of the ingredients together (about half an hour) which gave them a chewier texture and an “oaty” flavor he really likes. As suggested by other reviewers I added spices- 2 teaspoons cinnamon, 3/4 teaspoon salt, and 1 teaspoon of vanilla. The store was out of buttermilk so I used regular with a Tablespoon of vinegar. They turned out wonderfully.

Holiday Shortbread Cookies

Wow! First of all, this recipe was a lifesaver because I was making the cookies for someone who loves shortbread and I tried a recipe from a different site that called for me to roll out the dough and cut it into shapes with disastrous results. So I tried these cookies and they couldn’t have been better! They taste like the fancy, store-bought authentic shortbread I’ve tried and the texture was right on—firm but crumbly. I added a bit less than a quarter cup extra sugar and threw in some toasted and chopped cashews at the end so they would be nutty shortbreads. I had to stop eating them so we would have enough to package and give away! They weren’t the easiest cookies to make (my hands were very tired after cutting in a pound of cold butter- perhaps next time I’ll use the grating disc on my food processor first?) but I was very happy with the results!

Pork Chalupas

Excellent! We haven’t been able to find authentic Mexican food since we moved out east. We piled our chalupas with lettuce, salsa, sour cream, cheese, and extra green peppers. We also added fresh hot peppers while it was cooking. It tasted just like the food we used to get at the little Mexican take-out place back home.

Dark Chocolate Cake I

Excellent chocolate cake! Very chocolatey and moist and not overly sweet which makes it great for frosting and filling! I made this cake for my husband’s birthday and he said it was the best chocolate cake he’s ever had. I made a semi-sweet chocolate mousse for the filling and covered the whole thing with a bittersweet ganache. The only thing I did different from the recipe was dividing it into two cakes so I would have two thick layers and with a little extra cooking time they turned out beautifully. I used greased parchment paper on the bottom of my pans and the cakes came right out without a problem. I will be using this cake recipe for years to come! UPDATE: I made it this year with peanut butter mousse(Melt 1cup pb chips with 1/2 cup cream, add 1 tsp vanilla and 2 Tbsp pb. Beat 1+ 1/4cup cream with 2 Tbsp sugar until very stiff. Fold everything together (I added extra pb chips too) Put in between layers, chill overnight. Frost as usual. To DIE for!

Peppered Shrimp Alfredo

Super duper yummy!! Creamy sweet and shrimp mmm. I made it almost according to recipe; I used fat free evaporated milk instead of cream (I know, it's Alfredo, but I'm trying) and I was afraid of over cooking my shrimp so I sauted it separate and threw it in at the end. I was apprehensive because its making a sauce with jarred sauce but it's my new favorite thing with shrimp!

Breakfast Burritos with Green Salsa

Delicious! Used a carton of egg substitute and light cream cheese. Everything else was spot on to the recipe (including green salsa-yum!) and I wouldn't change a thing.

Classy Chicken

Kind of good, kind of odd. It might have just been that our fresh dill was a little strong but my boyfriend asked if the zucchini were pickles... and I had to agree, they tasted just like pickles after cooking in the sauce.

Easy Weeknight Tuna Pot Pie

This is five stars, not because it is the most wonderful tuna pot pie in the world, but because it's pretty tasty and literally the quickest thing in the world to cook. I added some spices and a bit of milk and didn't cook the frozen veggies/tuna for as long as they said. From start to finish dinner on the table in less than a half hour... terrific!

Apricot Muffins

Good breakfast muffins. I didn't use as much orange zest as they called for because my orange was small. I substitued applesauce for oil to make them lower calorie. I thought they were a bit bland so the next time I made them with a teaspoon of cinnamon and a quarter teaspoon nutmeg and I thought they were much improved.

Creamy Chicken and Wild Rice Soup

You really can't mess this soup up! I thought I might- I used random proportions of most of the ingredients based on what I had on hand. I used a larger rice box because it was all I could find and added some celery, carrots, onion, and mushrooms. Even with skim milk it was thick, creamy and delicious!!

Zesty Porcupine Meatballs

Yum. Just like mom used to make. I added half a can of soup to the meatballs to make them nice and tender and a bit of extra rice to soak that up. I also wanted more sauce so I used the other one and half cans of soup and added a can of tomato sauce. A few extra shakes of Worcestershire and some hot sauce and it was great.

Awesome muffins! I usually tweak muffin recipes to lower the calories or to add more flavor but I made these exactly as directed and they were delicious (and only 180 calories)! I will be making these again soon.
