Cilantro-Lime Dressing

Good as is but too sweet for our tastes; a bit more bite and it would be wonderful. Next time we will add less honey and more lime juice/vinegar.

Tom Ka Gai (Coconut Chicken Soup)

Yum! We consumed the whole pot. Yes, it's a mock version. But even the Asian markets here don't carry the real ingredients so I think this is marvelous. Serve over rice. Add some sugar- a few tablespoons- to bring it all together. Leave out turmeric.

Zesty Porcupine Meatballs

Yum. Just like mom used to make. I added half a can of soup to the meatballs to make them nice and tender and a bit of extra rice to soak that up. I also wanted more sauce so I used the other one and half cans of soup and added a can of tomato sauce. A few extra shakes of Worcestershire and some hot sauce and it was great.

Curried Coconut Chicken

Good! Wanted a thick curry sauce so I used tomato paste in place of sauce. Everything else was to recipe. We enjoyed it very much. I think I'll put some vegetables in it next time (like maybe cauliflower?) for some different texture.

We enjoyed it. I had to use beef only because I could not find lamb at the store but I can imagine that would make it even better. We both liked the filling more than the peppers though. Maybe I will just use the filling recipe in the future.

Cindy's Awesome Clam Chowder

Good! I used one less potato because mine were large and I didn't want that much soup and made substitutions because of my BF's diet restrictions- fat free half and half and turkey bacon. Other than that I followed the recipe. A little disappointed that it wasn't very clammy, even with boiling the potatoes in clam juice. I may add extra clams next time. But it was tasty nonetheless and not too terribly difficult to make.

Zippy Shrimp Linguine

Loved it!! I used a lot less linguine (whole wheat too), a couple (small) heads of broccoli, one zucchini, one summer squash, a finely chopped carrot, and a small package of fresh basil. Other than that, I followed the recipe pretty much. I had to whip out my wok to cook all that but yum! what a light and wonderful supper. I think next time I will try to use more basil as it really adds character to this dish.

Can be a bit salty but otherwise good. I ended up using the entire 8oz of cream cheese (not just half of it) to cut the salt and that seemed to do the trick.

Peppered Shrimp Alfredo

Super duper yummy!! Creamy sweet and shrimp mmm. I made it almost according to recipe; I used fat free evaporated milk instead of cream (I know, it's Alfredo, but I'm trying) and I was afraid of over cooking my shrimp so I sauted it separate and threw it in at the end. I was apprehensive because its making a sauce with jarred sauce but it's my new favorite thing with shrimp!
