Brown Sugar Meatloaf

I have been making a version of this for a while and it is my BF's favorite meatloaf- I have it tweaked to the way we like it. I use ginger from the tube (gormet spice blend), instead of an onion I use a packet of onion soup mix (I ran out of onions one day and did that and he loved it), and I use breadcrumbs just because it's easier. I also mix the ketchup and brown sugar sauce separate (not on the bottom) and add tomato sauce and Worcestershire and use it as a glaze.

Golden Burger Spirals

Not a bad dish but not fabulous- it was sort of homemade hamburger helper. Unfortunately I couldn't even get the BF to try it.

Beef Bourguignon II

Delicious! My carrots were small so I used 4 and I didn't used canned mushrooms or onions (I did throw in a few of the real thing). Surprisingly the wine was gone after 2 1/2 hours so I had to add some water and a bullion cube (and a bit more flour) but it still came out wonderful.

Chicken Asparagus Roll-Ups

I have made this several times and they are fun to make and look impressive (We still call it pretty chicken). Changes: Light mayo, no zest, 1 bunch asparagus, 6 breast halves (3 breasts) and Swiss cheese- sauce brushed on both sides of the chicken (lots of suace), oven at 350 for 20 mins. Perfect!

Cheesy Ham and Hash Brown Casserole

Yummy. Added some sauted peppers for nutrition's sake, used fat free sour cream, and reduced fat cheddar and it was still creamy and yummy (I bet with all the fat it would be to die for). Just a word of warning- no bowl in my house was large enough to mix this!! And cold it has the consistency of mortar- bring your trowel.

Breakfast Burritos with Green Salsa

Delicious! Used a carton of egg substitute and light cream cheese. Everything else was spot on to the recipe (including green salsa-yum!) and I wouldn't change a thing.

Slow Cooker Chicken Taco Soup

Excellent and EASY! I followed the recipe with the only addition being a dash of garlic salt and cumin at the very end. I also used frozen chicken and cooked it all 7 hours before trying to shred (I work nights and had gone to bed for the day) and it was perfect when I woke up. And yes, I used the beer, and I didn't have the bitter problem others had.

Made as directed, with the exception that I spread the beans as a separate layer next to each meat layer. Pretty tasty. Might add a little seasoning to the beef next time. (Edit) I gave this five stars now because it turns out to be the BF's favorite dish.

Creamy Chicken and Wild Rice Soup

You really can't mess this soup up! I thought I might- I used random proportions of most of the ingredients based on what I had on hand. I used a larger rice box because it was all I could find and added some celery, carrots, onion, and mushrooms. Even with skim milk it was thick, creamy and delicious!!

Classy Chicken

Kind of good, kind of odd. It might have just been that our fresh dill was a little strong but my boyfriend asked if the zucchini were pickles... and I had to agree, they tasted just like pickles after cooking in the sauce.
