Broccoli and Cheddar Soup

Hearty Chicken Tortilla Soup

This soup is a great way to use up those broken tortilla chips in the bottom of the bag! Just pour the soup over the chips and let soften for a few minutes before serving.

Pennsylvania Coal Region Barbecue

So easy and good! I used ground turkey and a little molasses and 1 1/2 T. Worcestershire sauce. Also, there wasn't enough sauce to simmer for 15 minutes--I just added a little water and heated the mixture through. I would say it serves 4, not 8... Yum.

Mother's Applesauce Muffins

This was a great base recipe, and I love that you can make it with pantry staples! I will add some additional spice next time since the muffins were a little on the bland side for me. I also added pecans, white chocolate chips and 2 T. molasses and cut down on the white sugar by 1/2 cup. Yum!

Pesto Turkey Burgers

These were excellent! I skipped the salt altogether, added an extra tablespoon of pesto, and also added an egg & 1/3 cup of milk--helped with holding the burgers together & making them tender. Served with a sauce of plain Greek yogurt mixed with fresh parsley, with spinach & tomato on top. My date said they tasted like a salad in a burger! Yum.

Kale and Adzuki Beans

Wilted Cabbage Salad with Bacon

Maybe it was because I subbed rice vinegar for tarragon, but this had kind of a weird aftertaste. For convenience, I used 3/4 of a bag of coleslaw mix (and about 1/2 the bacon grease.) Probably wouldn't make it again. Edit: I've changed my stars, because like another reviewer, this gave me a stomache later. Will not make again.

Peanut Butter Noodles

Use less ginger! I would say 1/2 to 3/4 Tablespoon of jarred ginger is plenty. I also doubled the peanut butter and added tofu, carrots & cabbage. Yum!

Lentil Pepperoni Stew

This is the first dish that I've ever cooked using lentils. I thought I'd give it a try, and with a few additions it turned out quite well. I sauteed three cloves of garlic with the onion before adding the orange lentils, water and tomato paste. I didn't add the (turkey) pepperoni until I added the other veggies (didn't think it needed to stew for quite so long), and the added veggies needed 55 min. to cook instead of the 35-45 minutes called for. Other notes: I subbed Italian seasoning for the oregano/sage, added two bay leaves, omitted the salt and had to add an extra cup of water to keep this from being too thick. This was a tasty, extremely filling, and economical recipe. Thanks for sharing, Diane!

We must have had a really hot fire, because ours burned to inedible in less than thirty minutes. Sad, because it looked like a really great recipe! I might try again, but check on them earlier.

Kettle Corn

This is a fantastic recipe--I've made it many times now. A couple of things you might want to keep in mind: medium heat on my burner ended up being 4 out of 10 heat levels (there were a couple of scorched bottoms before I figured out what was the proper temp.) When the popcorn is done, it is REALLY HOT so be careful, and have a bowl ready to dump it into. Finally, since this is so sticky, watch out for unpopped kernals (hard on the teeth!) Overall, though, a really great recipe!
