Bran Flax Muffins

Great muffins for being so good for you. Tried substituting applesauce for the apples and it worked great. I've made them several times now, sometimes with or without raisins. Very good! My 2 year old loves them with cream cheese!

Easy Batter Fruit Cobbler

Delicious! Doubled the recipe for a 9x13 pan as recommended by another review. Made with fresh nectarines and added almond extract & cinnamon to the batter. Everyone was exuberant about it, especially with a little vanilla ice cream on top!

Pumpkin Muffins II

Wow! Really yummy muffins! The recipe doubles easily and made 3 dozen very large muffins. Like other reviewers I made substitutions as needed: 1/2 the sugar, 1/2 whole wheat flour, applesauce for oil flaxseed mixed with water for eggs. Delicious!!

Refried Beans Without the Refry

My family loves this recipe, I can control the texture of the beans and give them so much more flavor than canned! Chicken broth makes a huge difference and the beans freeze well.

Granola Bars III

Great recipe, huge hit, I make them regularly. I always double the recipe and bake in 9x13 pan to make them extra thick. I like to substitute pancake syrup for honey, I always have more of that on hand.

Fresh Apricot Pie

Shredded Beef Enchiladas

Very tasty--for healthier version substitute plain (full fat or low fat)yogurt for the sour cream--it cooks up great w/ the onions and chilis and with all that cheese you don't notice. Great recipe, a nice change from ground beef enchiladas at my house.

Peanut Butter Noodles
