Firecracker Grilled Alaska Salmon

I served this with mahi mahi instead of salmon and it was awesome. Served it at a dinner party for 10 and everyone was amazed how good it was. Even those who weren't thrilled to see fish as the main entree. I doubled the recipe and towards the end I put some of the marinade in a sauce pan, mixed 1T water with 1T of cornstarch then added to the marinade, heat until thick and service over or under the fish when serving. Yummy!

Tequila Cocktail Sauce

Love this recipe and have passed it on to a local seafood restaurant. I make a batch of this each summer and freeze 1/2 & 1 cup portions in snack size bags. Then they're on hand for a year. I always receive compliments when we serve this. No one can tell that the "secret" ingredient is tequila.

Cheesy Ham and Hash Brown Casserole

Cooked this for a teachers' brunch and was asked for the recipe by almost everyone. I found diced ham at Walmart. I've cooked this at least 25 times. It freezes well (both before & after cooking.) We have a beach house so we have plenty of overnight guests. I try to keep a few small tins of it (6 serving size) in our freezer to serve with eggs for breakfast. Yummy dish. Tastes even better the 2nd day :)

Won Ton Wrapper Appetizers

I've used this recipe for over 10 yrs and it's always one that gets eaten quickly and everyone asks for the recipe. I always use the already made mini Phyllo cups (found in the freezer section.) I fill the uncooked cups & then put them back into the trays & boxes they came in and freeze them for later. These are especially great to have frozen during the Christmas holidays. Just pull out a box & heat them up. Better pull out 2 because they go fast!

Peanut Butter Pie I

This is the best Peanut Butter Pie ever. I've tried many trying to find the "best" and this is it. Easy to make. I took a sample pie to a local upscale restaurant. The owner and chef loved it and they are now selling the pie slices for $5 each.

Creamy Dill Cucumber Toasties

I hosted game night with 26 adults. I doubled the recipe & still these were gone within 30 mins. Everyone wanted the recipe. It is very good & easy. The cream cheese part can be made the day before. The recipe does not say whether to toast the bread or not. I assumed since it was called "toasties" that I should but I decided at the last second not to. I do think it's better when the bread is NOT TOASTED. FYI - your grocery deli will slice the bread for you.
