Microwave Bread and Butter Pickles

I made these today with cucumbers from our garden. I made one regular batch (using 1/2 cup Splenda instead of sugar) and one batch I added 1/4 tsp. crushed red pepper flakes and 1 clove of minced garlic as one reviewer suggested. Both are fab!!

Cha Cha's White Chicken Chili

We absolutely love this recipe! Often times we use leftover Beer Can Chicken that was cooked on the grill and you get that really great grilled flavor. Other times I put it all in the crockpot and let it go all day. Great both ways.

CB's Black Eyed Peas

Just made this for New Year's Day and it's great. I made a couple of changes - I left out the fresh jalapeno and instead added a can of Original Rotel (still used 1 can diced tomatoes, too), and I added some chopped up ham. Cut up and then cooked the bacon in the microwave, less mess than a skillet. I put it in at 11:30pm and it cooked on low for 12 hours, the beans are the perfect tenderness.

All Protein Meatloaf

My husband is a meatloaf lover and we thought he'd have to give it up when he went low carb. I do not like meatloaf, but even I like this recipe!! Twice now I've forgotten the crushed pork rinds and it has turned out fine, anyway. I think I'll just leave them out on purpose in the future.

Shrimp and Crab Stuffed Flounder

I did a variation. I used talapia instead of flounder and just layed the fillets out in the pan. Instead of paprika, I put in a teaspoon of Emeril's Bayou Essence. I put everything on top of the fish and put the cheese on, then sprinkled more of the Bayou Essence over the top. Then baked as directed. MUCH more flavor this way.
