Braised Balsamic Chicken
I actually forgot to add the canned tomatoes and panicked, thinking to myself that the chicken would taste too much like balsamic vinegar. Alas! I used maybe a 1/4 to 1/3 cup of balsamic vinegar, adding the minced garlic just before dropping in pan to prevent tburning, and it came out delicious. I served it with a flavored couscous and sauteed fresh vegetables (carrots, cauliflower, broccoli and green beans).

Double Layer Pumpkin Cheesecake
This cheescake is delicious if you love pumpkin pie and cheesecake, however I have a few suggestions. Rather than using a regular pie plate (I made my own graham cracker crust), I would use a springform pan and more pumpkin cheescake filling. It came out rather low for a cheesecake (despite the picture), maybe an inch high. I didn't read many reviews before baking, but I am sure people have mentioned soaking the pie, still in pan, in a warm water bath to help release it when slicing. It also takes quite a bit of time for actual eating so I recommend baking it the night before eating. Other than time and cake height, it was quite tasty.

Baked Pork Chops I
despite the long baking time, the pork was incredibly tender and there was no need to use a knife. it simply flaked off with a fork! my boyfriend and i don't enjoy mushrooms, but i still used a cream of mushroom soup base, along with water and half and half. i also sauteed onions to add into the mixture. i served them with garlic mashed potatoes and vegetables. fantastic and pretty easy!
