Pumpkin Soup

I only used a quart of broth as I didn't want a very thin soup. It was perfect! Rave reviews from all the moms and three of the kids (3-5 y/o). I also used a mix of baked acorn squash and sugar pumpkin. I used red onion & sauteed it first to soften it. Omitted the salt. Definitely will make again. Glad to find such an easy and great recipe to use up some of my winter squash & pumpkins.

Best London Broil Ever!

2 hours was way too long to cook this roast. My meat was dry and pasty. I'm annoyed such a great cut of meat was so ruined.

Butterscotch Apple Cookies

cookie too bland the only flavor comes from the chips and they're too sweet. This is w/o me making the topping to put on after they came out of the oven. The were too wet I even added about a cup of oats to the dough because it was just too loose. Hubby will probably love them, he's never met a cookie he doesn't like but I won't be making them again.

Apple Squares

We picked about 25 pounds of apples this weekend at a friends house so I've been working apples for 2 days. I tried this recipe to try to do a variety of different things with them. Like another poster I tripled the recipe and took it out before it looked quite done. I find the texture a bit dry and the taste a bit bland. I was concerned I'd had too many apples and it would be mushy but that wasn't the case at all. I used an apple peeler/corer/slicer device then put the apples through my food processor to chop to get them well disbursed but it didn't seem to help.

Colcannon

I didn't expect to like it and only made it because I got a head of cabbage and some leeks in my CSA box. I thought since I was making "Sheperd's Pie" I'd made it with colcannon instead of just mashed potatoes. I chopped the cabbage and steamed it with salt, boiled the potatoes with salt then drained each and mixed them together while the leeks were simmering. I used a little more than a cup of milk because the leeks needed it to cover them. I then mixed it all together and kept it warm in the oven while I made the "cream corn like no other' recipe from here for the middle layer. Then I layered it all and even my picky son ate it w/o protest! Will definitely make again and invite some Emerald Isle friends over in March for a Sheperd's Pie with colcannon.

Baked Tofu Bites

Kids and Hubby LOVED it! I haven't even had a chance to try it yet. Will definitely make this recipe a regular event. The first time I've not had to nag my son to finish his lunch before the school bus arrives. I used dark agave nectar because I ran out of pure maple syrup. I added 50% more agave and ketchup, doubled the vinegar (using Rice vinegar), used fresh grated garlic and white pepper (hubby won't eat blk pepper) and marinated for an hour as another reviewer said. Then I baked on a parchment lined sheet at 375 the first 15 minutes, 400 the second 15 minutes, and spooned the left over marinade over after the second 15 minutes and cooked 5 minutes more. I freeze then thaw my tofu to get a more meatier texture and pressed the water out before cutting.

Fresh Ginger Carrot Salad

WOW! I rarely use a recipe w/o it already having a great review/rating but I was desperate for something to do for a potluck and this had everything I had on hand or could easily substitute. I did substitute freeze dried ginger for the coconut because we have a coconut allergy in the house. I used vanilla yogurt instead of plain for a little sweetness because I didn't get that much liquid out of my crushed pineapple. Speaking of pineapple I used a 20 oz can. I omitted the fresh ginger because I used the dried. All that said! It was fantastic and I'm not a fan of carrots or carrot salad. I just wanted to use something I had on hand for a potluck rather than go spend money. What a joy I found a new recipe that I love and will use over and over again with the carrots from my CSA.

No Bake Choco-Peanut-Oatmeal Cookies

My husband LOVES these. He calls these "crack" cookies because he says they're highly addictive. I like to make them in the summer when it's too hot to turn on the oven. I just made him a batch for our anniversary. They disappear in no time. Super easy. I grate a square of dark baking chocolate in and add extra peanut butter. Sometimes I use cashew butter instead of peanut. All very tasty!

Chocolate Cornstarch Pudding

way too sweet! Should have listened to the reviewer that said make as stated rather than reduce the cornstarch. I quadrupled the recipe and used half the recommended amount of cornstarch as some reviewers had said. I was simultaneously making Fannie Farmer's Blanc Mange and was amazed at how quickly it set up. It had a lot more cornstarch in it. So I kept mixing a Tbsp of sugar w/a Tbsp of cornstarch. I had to add another 3-4 Tbsp of each to get it to begin to set. I think this would be perfect as the recipe states rather than altering it by reducing the cornstarch. Will try again as is written.

Salsa De Tomatillo

Super easy and adjustable. I got a pound of tomatillas in my CSA box and a bunch of cilantro so I used the search to find a recipe that used both. I landed on this one and guessed on measure because some of the tomatillas were twice the size as others and I only had 9. Wish the recipe included directions for the prepping before simmering the tomatillas as I'd never worked with them before. I husked them and washed them with LemonBrite (I wash almost all my produce) and then put them to cook. Took it to a party with some authentic tortilla chips and made it mild by seeding & ribbing the jalepenos.

Blackberry Cobbler

I had picked twice as many blackberries so I doubled the recipe and tried to follow the suggestion of one reviewer to just layer it but that reviewer left some key details out. I had what I KNEW had to be too much butter and sugar syrup so I just brushed some butter on the bottom, then added the first layer of dough and scooped the berrys out on top. I ladled just a bit of the simple syrup over them then added the second layer of dough. It was an abyssmal mess! The dough was soggy (as to be expected). It has to be my error looking for a shortcut because other reviewers said it worked. I was just trying to work w/n the confines of my tiny counterless kitchen. The berries were salvagable. We scooped them out and ate them over ice cream and tossed the crust.

Southwestern Turkey Soup

Excellent recipe. I started w/ fresh turkey breast and veggie & chicken stock adding just some water for my liquid. Then I further modified it by adding 2 chopped green peppers, omiting the cilantro (because I was out) and cutting the corn off of three ears. It was fantastic! Great with a pan of cornbread! Worked great on helping me recover from my cold!

Vegan Chocolate Cake

This is a fabulous recipe! I made it first for a picnic with friends and we all loved it. Two days later I made four more to give to friends. It is a sure hit! I even adapted it by leaving out the cocoa, using orange juice for the water and orange extract and grated orange zest. It was just as fabulous. To help ease it out of the pan, spay the pan with Pam, loosen with a butter knife. I used a souffle pan and it worked perfectly. Thanks for the wonderful recipe.

Awesome Slow Cooker Pot Roast

This was everything it said it was. I thought it could use a little more salt though. I used a 2.71# roast and added 6 potatos cut into large wedges and 1 large carrot. We loved it. This is now my only pot roast recipe. I can't wait to try it again, and experiment with the soups. I used a dried onion and mushroom soup mix from Fantastic Foods. It was FANTASTIC!

Child-Proof Sugar Cookies

Absolutely Ultimate Potato Soup

I used this recipe with the extra butter instead of the bacon, I also used 2/3 cup plain rice milk instead of the cream. It was fantastic. I made it last weekend, and I'm making it again today! We love this, it has become a regular on the cold weather menu.

Gingerbread Cookies II

The only bad thing about this recipe is that it produces a really dry cookie. Better for decoration than consumption. The kids had a great time working the dough. It was very good dough, easy to roll and cut.

The Best Rolled Sugar Cookies

We tried this recipe for cutting cookies to decorate the tree. It was a great dough. The children were able to handle it very easily. It was fantastic. Much better than the recipe for "Childproof sugar cookies".
