Made this recipe as written and the whole family thought it was great! Will definitely be sending this to school in my kids' lunch.

Easy Mac and Cheese Muffins

Reviewed: Aug. 10, 2010
Great Dish! I'm trying out recipes that could be taken in my kidos lunches to school. Made 2 changes: we don't eat eggs, so I used an egg replacement product.. Also, instead of bread crumbs, I used Panko (I also doubled the amount). The kids thought it was great!

Unbelievably Easy and Delicious Vegetarian Chili

Reviewed: Aug. 10, 2010
This was great! I made some changes based on what I had on hand... Used 28oz can crushed tomatoes;1 can Great Northern beans; 1 can Kidney beans; and instead of vege burger crumbles, I shredded 1 package of Tempeh in. I put everything into the crock pot in the early afternoon on high, cooked for about 3 hours...The Tempeh was great in this chili; it gave an interesting texture to the dish. Will definately make again.

Coconut (Haupia) and Chocolate Pie

Reviewed: Aug. 7, 2010
This did not go over very well at a recent get together. The coconut portion of the pie was overpowered by the taste cornstarch, and it also did not set up well, despite being refrigerated overnight. The chocolate portion was just ok; perhaps milk chocolate chocolate chips would have given it a better flavor. The best part of this pie was the cream cheese pie crust I made for it.... Would not make again.

Gaye's Microwave Fudge

Reviewed: Jun. 14, 2009
This was so good for being microwaveable. It did taste just a little like powdered sugar but was good anyway. I used a mixer to beat it after microwaving, instead of stirring, and it didn't turn out lumpy. It was creamy. It's really fast to make and it's worth it. I thought it was just the right taste, as in not too bitter and not too sweet.

Pittsburgh Football Party Cilantro Salsa

Reviewed: Dec. 29, 2008
I made this pretty much as listed, but I used organic petite diced tomatoes (juice drained of course). I also used whole cumin that I toasted and ground before adding to salsa. This added great flavor! This was easy to make, and even the kidos gobbled it up. Thanks!

Breaded, Fried, Softly Spiced Tofu

Reviewed: Mar. 1, 2007
My vegetarian family loves this tofu! After a couple of trys, I've found that deep frying makes it amazingly more delicious. I'm not big on deep fat frying; I only use it for a couple of recipes, but try it with this one! The family gobbles it up every time.
