Crispy Roasted Chicken

BEST chicken marinade I've tried thus far on this site. Left out the oil since I'm watching fat intake & did grilled chicken breasts instead. Flavor was FANTASTIC.

Bangin' Smokey Beef Brisket

fan-flippin'-tastic. Usually inTexas, brisket isn't cooked in barbecue sauce like many recipes on here call for. Each person adds there own sauce after it's finished cooking. I think this is what accounts for some reviewers saying it didn't have much "flavor". I used this recipe to make brisket sandwiches that I served with coleslaw. Yum! Followed the recipe exactly as is. This recipe is a keeper.

Chicken Lo Mein

I would have to agree & with another reviewer & say that it was rather poor. I've never had chicken lo mein that was saucy but decided to give this recipe a try because of the great reviews. Nobody in my family really enjoyed the dish. I would say the marinade for the chicken was great, but that's about it. I made some more lo mein the next day, but a dryer version (my own recipe), & everyone enjoyed it so much more.

Classic Waffles

Like another reviewer, I followed the recipe exactly as written & my waffles never got even remotely crispy. They also weren't light & airy. It's an ok recipe but I prefer the recipe for "Mammaw's Waffles".

Japanese Nabeyaki Udon Soup

Delicious! Used oyster mushrooms instead of shitake & left out the eggs but it was still unbelievably tasty. Used the konbudashi recipe (with bonito flakes) on this site as the base. My whole family ate it including my 3 year old who had never had Japanese food before.

Dashi Stock (Konbudashi)

Excellent! Don't be afraid of adding the full amount of bonito flakes. It lends a smokey fish flavor to the stock that makes all the difference. Used this as the base for the Nabeyaki Udon soup that is on this site.

New York Italian Pizza Dough

Making this dough without a mixer or bread macine is not for wimps. I prepared this dough last night using only a bowl, spatula, & some serious muscle. As the cook's note indicates, the douh is too sticky to handle with your hands so I did the mixing/ kneading with a spatula. There was one reviewer who added 1/2c more flour to be able to handle the dough with her hands, but I successfuly managed add about only 1/4c & still manage. (I could have managed with less added flour but I was following the instructions.) Once I was done with all the mixing, i sprinkled some flour on my counter & scraped the dough out of the bowl onto the counter. I floured my hands to flip the dough over & shape it into a ball. Afterwards, I picked it up & put it in an oiled bowl & moved the bowl arouond to oil up the whole ball & viola!
