Foolproof Rib Roast

Reviewed: Dec. 29, 2014
I used the rub and it had great flavor. I, too, was very nervous to make it this way, but I followed the directions. I just got confused when the 3 hrs were up and it was time to turn the oven back on....was I supposed to start timing it for 30 minutes after the oven reached 375? It took about 40 minutes for the oven to get to that temp. I have an oven that has the meat thermometer built in, and set it for 125. I took it out when it reached 125, that took another 30 minutes. I wrapped it with foil, and let it rest for a half hour. It turned out perfectly! The middle was very rare ( just how my family likes it), and the outer portion was medium rare (just the way my guests liked it).

Popovers

Reviewed: Dec. 29, 2014
I read the reviews before I made these. I let the eggs and milk come to room temp. I added 1 tsp. vanilla. I forgot to preheat the popover pan, but I did add a dab of butter to the bottom of each cup and I coated the top rims of each cup with butter. I preheated the oven. I put them in for 20 minutes, and then watched them when I turned the heat down to 350 and after 10 minutes they were very dark, so I took them out. I'm not sure if they should have been left in a little longer. The outside was very dark and the inside was chewy. Next time I will take the top rack out because they were hitting the top rack.

Pork Tenderloin with Apples

Reviewed: Mar. 8, 2010
FABULOUS!!!!! You will love it!!! Even my picky eater (son) liked it! I ended up doubling the sauce ingredients. I combined them with the apples and after 5 minutes the liquid cooked down, so I added the same amount again and cooked for 5 more minutes. Then I added the cornstarch. I cooked the pork exactly as instructed and it was delicious....very moist and tender!!!!!!

Crustless Cheese Quiche

Reviewed: Mar. 26, 2008
Loved this quiche! I read the reviews before I made it, so I did not use the butter. It was great! I had a red pepper, so I chopped up half of it and added that too! It added great flavor and nice color. I took it to Easter Brunch at a relative's and it went fast. Someone even commented that they liked that it did not have a crust. I will definitely be making this again, and again...it's easy to make, you can change the "add-ins", and it tastes delicious! Thanks for the recipe!!

Old English Cookies

Reviewed: Mar. 1, 2007
My daughter used this recipe as her first solo baking project for school. The batter prior to adding the coffee was very dense. She added the brewed coffee, hot (because the recipe did not say cold and it said brewed). The mix immediately became the consistency of a cake mix. So she put it in a 9" x 13" pan that was greased and floured, and baked it for 25 minutes. It came out fine. However, the flavor is very mild. (Not to my liking).
