Pumpkin Loaf

Delicious. In order to make these lower carb/glycemic index I used xylitol (GI of 0 and its natural!) and almond flour instead of the sugar and flour. All eight of the kids and the adults loved them.

Avocado Green Goddess Dressing

Well, even though I'm not old enough to remember the seventies, this dressing was delicious! I used plain yogurt since I had some fresh made on hand and no anchovies because I didn't. I thought it needed a little more lime and garlic, so I threw them in... AWESOME!

North Carolina BBQ Sauce

This sauce was not nearly as potent on the meat as it was when I tested it by itself before I served it. My kids gobbled it up, they loved it, although I did reduce the cayenne pepper a bit. My favorite part was the way it made the pork chops taste less "porky". =)

Banana Pumpkin Bread

I made this recipe using a cake pan since I didn't have a loaf pan. It worked fast and great! I used xylitol (natural sugar alcohol with a GI of 8) in place of the sugar, only 1/3 c honey, and whole wheat pastry flour. I also squeezed in a clementine orange, since we had these on hand. It was absolutely delicious!

I tried the balsamic vinegar substition suggested by another reviewer and we did not like the sauce that way at all. We did really enjoy the spices on the meat though (I served the sauce separately). The kids each had several servings!

Easy Dinner Hash

I enjoyed this dinner, but I was suprised by how dry it was. It needs a sauce similar to au gratin potatoes: I would like to see someone post a comment or new recipe that incorporates a sauce to bind these ingredients together. Since there is not much water, you have to be careful not to burn the sausage while you cook the potatoes. (I think it would be better to put the potatoes in a few minutes after the sausage has been cooking.) Also I used frozen hash brown potatoes to make it easier, but I should have put the onion in with the sausage, since it took longer to cook than the hash browns. To summarize: start the sausage and onion at the same time. Add the potatoes four minutes later with some kind of cheese sauce, then you would have a five star recipe.

Beef and Cornbread Bake

This was great comfort food on a cold night, it really warmed us up and "hit the spot" as we say here in Texas. I don't agree the comment at the beginning of this recipe that it would go well with with a grilling menu or to take on a picnic. I had to substitute diced tomatoes for the tomato sauce, but it still came out great. I also added a chopped onion to the meat as it was cooking. This dish was substantial, filling, and had a zesty taste that totally obscured the fact that it was 'plain old' ground beef. Even my kids liked it. You could even add more shredded cheese if you are a cheese person. You should try it. I will definitely make this again.

Creole Black-Eyed Peas and Rice

I made black eyed peas last night and no one ate it. So, tonight I had tons of leftovers and I tried using them on this recipe. I made it without the rice and we ate it with fresh tomatoe slices on the side. It was delicious! These were the best black eyed peas we have ever had!
