Grandmother's Buttermilk Cornbread

Awesome 5++ stars. To the readers who had dry bread.... 1/4 lb not 1/4 cup butter!!! This might have made a difference if you read it wrong, 1/4 lb is 1/2 cup of butter. Also I put it in my greased preheated iron skillet for 25 min, excellent!!

Scalloped Potatoes II

10 stars. This is awesome with some minor adjustments. My entire picky family loved these. For serving of four: I used 5-6 small white potatoes (sliced thin) 1 small onion (diced), 5T flour, 5T butter, 2 and 1/4 c milk, 1/2t pepper, 1/2t dry mustard, 1t each of garlic powder, onion powder, paprika and salt, pinch of cayenne pepper and 1/4 c parm cheese. OK grease 2 quart casserole dish, preheat over 425, make roux in saucepan: melt butter then whisk flour cook one minute until it resembles wet sand, add rest and cook until slight thick. put one layer potatoes, one layer onions, one layer sauce and continue once again. Top off with paprika and parm cheese, cook 425 5 minutes then 375 for 50 minutes. Awesome and actually very easy. Must try will not be sorry

Fettuccini Carbonara

Very Good, I changed a few things to make this restaurant quality: I only used 2 shallots, finely chopped, no onions, only 1/2 lb bacon and 4 boneless skinless chicken breast, 1 can peas, 1 cup heavy cream, 4 egg yolks, 1& 1/2 c shredded parm cheese and 3 cloves garlic. I grilled the chicken breast, slice them thin and set aside. I also cooked the bacon along with the shallots, then added garlic. I added the peas (drained) and the chicken at the end, topped with fresh cracked pepper. Very good and VERY easy

Neat Sloppy Joes

5++ stars, so long can mix. I changed just a few things, for 1 lb meat, 1/2 onion, 1/4 cup celery, 2 cloves garlic chopped, cooked all together, drain. Add can tomato soup, 2T ketchup, 2t white vinegar, 1T & 1t brown sugar, 1t worch sauce, 1/4 t salt, 1T + 1t BBQ sauce, 1/2 splash liquid smoke , mix all together, simmer with lid on for 15 minutes. My family love it.

Basil Shrimp

I wish I could give this 10*. I was a chef for 5 years at an Italian restaurant and we always were looking for different specials to run, too bad I did not have this. Restaurant quality. The only change I made was that I also added 2 chicken breast thinly sliced to the marinade and grilled it together over low heat on a piece of aluminum paper (sparyed with non stick spray). I also left the shell on the shrimp while marinated. My husband loved it and he is picky. A++++++

Traditional Mashed Potatoes

This is by far the best mashed potatoes!! I did change few things. I added 1/2 cup melted BUTTER and 1/2 cup warm milk. I aso boiled a clove of garlic along with the potatoes and then mashed it in with the potaotes, what a great taste!! This is our family keeper!

Peanut Butter Cupcakes

Excellent, however I would advise against not using cupcake papers. I opted to grease the first batch with shortening, disaster, they are so moist that the bottoms stuck to holder.

Quick Black Forest Cake

Divine and easy. Hubby gave 5 stars and he is hard to please. I used Pillsbury moist supreme devil. I added 1/2 c oil & 1/2 c water. I also placed batter in 2 greased 9 inch cake pans baked 30-35 minutes. I cooled the cakes and in between the layers I put chocolate icing then covered the entire cake with it. So good!! Icing simple: 4 & 1/2 c confec. sugar, 1/2 cup milk, 1 c soft butter, 1 & 1/4 c cocoa, 1/2 tsp vanilla and 1/2 tsp almond extract. Beat butter, then add rest and beat....so good and like I said easy

Italian Cream Cake II

Excellent and very easy. I only used 1 cup coconut and I added 1 tsp of Almond Extract for the authenic Italian cake. So good. Next time I may decrease the coconut to 3/4 cup.

Cranberry Pork Chops II

Awesome. My picky hubby and 6 year old loved it. I changed a few things. For a serving of four: 4 boneless chops, 1 cup fresh cranberries, 3 T sugar, 1/2 t salt, 1/8 t pepper, 1/8 t pumpkin pie spice,1/8 cup water and 1/8 cup oj. cooked as directed, great and easy dish

Sweet Potatoes 'n' Pears

This is awesome and easy. I did make a few changes. I used 4 fresh very ripe pears, nuked them for 2-3 minutes until soft, also added one large can of yams, drained and a dash of nutmeg. After blending all together I topped with plain bread crumbs drizzled with butter and baked for 20 minutes at 350. This is a delicious and easy dish!!

Fluffy Biscuits

Very good but missing something, maybe a little more salt, will try that next time. I used 1/2 butter and 1/2 shortening, also increased sugar to 1 T. I only had to bake for 7 minutes, may have made them smaller, I used the top of a glass drinking glass to cut. Topped with melted butter. Also used buttermilk

OMG this is the recipe to keep, 5+++ stars. I used Sorrento whole milk velvetty smooth ricotta. I did not even need to drain this type. No almonds. I used 1/8 t almond extract and 1T water in place of the amaretto liquer. Skipped the cocoa powder, dusted with conf sugar and 1 cherry at each end!! I made my own cannoli shells with my pizzelle maker. AWESOME

Actually Delicious Turkey Burgers

AWESOME: for serving of 8: I changed to 2 lbs ground turkey breast, 1/4 c italian bread crumbs, 1/4 c finely chopped onion & 1 clove garlic chopped as well, 1 egg, 2 T dried parsley, 1 t seasoned salt, 1/4 t pepper, 1 T bbq sauce, 5 splashs worch sauce, 1 splash soy sauce, mix together, add a little flour when shaping patties to form a nice crust

Sensational Strawberry Shortcake

This is excellent. I made as directed except for the nutmeg, I added 1/2 tsp pumpkin pie spice. So good, not crumbly at all, the key is not to over mix. Just toss until moistened! I used my hands to do this. A keeper and use the sweetened whipped cream recipe from this site

Simply Amazing Meatloaf

This was pretty good. I did make a few changes however. I added 1/4 cup water 1/2 cup salsa and this made it moist. It did not hold well but was moist. The rice was fine excpet for the pieces on top of the meat they were dry of course but expected that. Wil make again. Also added garlic powder and worch. sauce

Eve's Chicken Quarters

I used 4 large leg/thigh quarters so I doubled the rice (my hubby loves rice), used 2 c water, LARGE (24oz I think) can of chicken broth, 16 oz sour cream, and cut way down on the garlic. I am Italian and love garlic but it is way too over powering in this dish. After making this twice I have cut down to 1 clove of garlic and that is it. Very easy and good. Thank you

Icy Banana Milkshake

These are the best. I have played with this a lot it is very versatile. I use NO ice cubes but frozen peeled bananas instead. Approx- 2 bananas, 1 & 1/2- 2 cups milk, blend. I have added vanilla, pumpkin pie spice and even chocolate syrup to make different shakes. My family loves them a keeper, thanks
