Peanut Butter Cupcakes

Excellent, however I would advise against not using cupcake papers. I opted to grease the first batch with shortening, disaster, they are so moist that the bottoms stuck to holder.

Corned Beef and Cabbage II

My family loved this. I also took some advice and used the cooking bag, 250 for 3 hours with orange slices and celery, xtra water. After 3 hours removed the orange slices and added the rest including the caramelized onions and potatoes, for another three hours, excellent.

Carrot Cake I

Wow a keeper for sure. I used 1 cup of oil and 1 c brown sugar and 1 c white sugar, also I baked at 350 40 minutes in 9x13. I also used cream cheese frosting. Tip: I use a Kitchen Aid chopper (any chopper will do they sell some at Walmart mini choppers for $5 on black friday) I put my carrots in there and pulse until finely chopped, work as well as shredded and a lot easier. Yummy!!!

Light Wheat Rolls

These are great just great. I did half a batch in the breadmaker and made rolls and also made muffins. I used half wheat and half bread flour. I also used half browm sugar and half white sugar. Great a keeper for sure.

Mom's Baked Macaroni and Cheese

This is awesome. I used 1/2 lb. each of Xsharp cheddar, colby and Montery jack plus I added a dash of nutmeg, paprika and dry mustard. I also added 1/4 cup sour cream, so good. Do not forget the bread crumbs, I used Italian to give it even more flavor

Traditional Mashed Potatoes

This is by far the best mashed potatoes!! I did change few things. I added 1/2 cup melted BUTTER and 1/2 cup warm milk. I aso boiled a clove of garlic along with the potatoes and then mashed it in with the potaotes, what a great taste!! This is our family keeper!

Icy Banana Milkshake

These are the best. I have played with this a lot it is very versatile. I use NO ice cubes but frozen peeled bananas instead. Approx- 2 bananas, 1 & 1/2- 2 cups milk, blend. I have added vanilla, pumpkin pie spice and even chocolate syrup to make different shakes. My family loves them a keeper, thanks

Barlow's Blackened Catfish

My husband is picky and he said this was delicious, I did change a few things. I only used 1/2 tsp cay pepper and added 1 & 1/2 tsp cajun seasoning. I also only put 1/4 cup sweet vinegar and olive oil mixture with s/p. I also sprayed the baking dish with non stich spray so the fish would not stick while baking, excellent

Basil Shrimp

I wish I could give this 10*. I was a chef for 5 years at an Italian restaurant and we always were looking for different specials to run, too bad I did not have this. Restaurant quality. The only change I made was that I also added 2 chicken breast thinly sliced to the marinade and grilled it together over low heat on a piece of aluminum paper (sparyed with non stick spray). I also left the shell on the shrimp while marinated. My husband loved it and he is picky. A++++++

Chocolate Banana Cream Pie

Very good, I made a few changes. I used an extra servings size graham cracker crust, 3 bananas, banana pudding, 2 tbsp milk, 1 tbsp butter and 1/2 cup chocolate chips. Also I decreased the coconut to 1/2 cup. I made double layers as in lasagna. Turned out great

Simply Amazing Meatloaf

This was pretty good. I did make a few changes however. I added 1/4 cup water 1/2 cup salsa and this made it moist. It did not hold well but was moist. The rice was fine excpet for the pieces on top of the meat they were dry of course but expected that. Wil make again. Also added garlic powder and worch. sauce
