Chicken Katsu

Reviewed: May 16, 2008
This was good, I did use pork instead of chicken. Will try chicken next time and rate again. I used a soy sauce to dip: 1 c sugar, 1/2 c vinegar, 3 T soy sauce, 3 T water, cook low 10 minutes.

Fluffy Biscuits

Reviewed: May 16, 2008
Very good but missing something, maybe a little more salt, will try that next time. I used 1/2 butter and 1/2 shortening, also increased sugar to 1 T. I only had to bake for 7 minutes, may have made them smaller, I used the top of a glass drinking glass to cut. Topped with melted butter. Also used buttermilk

Fettuccini Carbonara

Reviewed: May 8, 2008
Very Good, I changed a few things to make this restaurant quality: I only used 2 shallots, finely chopped, no onions, only 1/2 lb bacon and 4 boneless skinless chicken breast, 1 can peas, 1 cup heavy cream, 4 egg yolks, 1& 1/2 c shredded parm cheese and 3 cloves garlic. I grilled the chicken breast, slice them thin and set aside. I also cooked the bacon along with the shallots, then added garlic. I added the peas (drained) and the chicken at the end, topped with fresh cracked pepper. Very good and VERY easy

Pineapple Upside-Down Cake V

Reviewed: May 6, 2008
very good. I did not use the crushed pineapples, instead made a 9X13 and used a large can of pineapple slices. Baked 40 minutes. The coconut was an excellent addition, who would have ever thought of that. Will make again.

Excellent and easy. I halved the recipe and the total time was maybe 45 minutes. Hubby loved it. Only suggestion is use low sodium beef broth, a little too salty, but overall it was awesome.

Old Fashioned Coconut Cream Pie

Reviewed: Feb. 23, 2008
5+++ must try and so easy!! I used 1 & 1/2 c canned coconut milk and 1 & 1/2 c milk, no flour- used 1/3 c cornstarch. I did not toast the coconut that went into the pie only the coconut that topped it. I also used fresh homemade whipping cream and I used fresh frozen coconut. What a treat. It did take me about 20 minutes on low-med heat for it to thicken to the pudding stage.
