Reviewed: Oct. 4, 2008
I did double the potatoes and kept everything else the same, sprayed the pan with non stick spray and had no trouble with the potatoes sticking. Family loved them.

Classic Fish and Chips

Reviewed: Sep. 22, 2008
Loved it. Used vid. sweet onions instead of potatoes and made onion rings with left over batter. Put batter in frig for 25 minutes, used beer instead of milk, and placed fish and onions in freezer for 25 minutes. Made sure oil (used a cast iron skillet on side burner of grill) stayed at 350, drained well after cooking. Served with tartar and hot sauce. Also added old bay to batter.

Eve's Chicken Quarters

Reviewed: Jul. 4, 2008
I used 4 large leg/thigh quarters so I doubled the rice (my hubby loves rice), used 2 c water, LARGE (24oz I think) can of chicken broth, 16 oz sour cream, and cut way down on the garlic. I am Italian and love garlic but it is way too over powering in this dish. After making this twice I have cut down to 1 clove of garlic and that is it. Very easy and good. Thank you

Very good, all I changed was I diced raw chicken and sauteed it in a pan with evo and 1/2 way through added 2 cloves of garlic and half an onion (both chopped fine)and finished cooking the chicken. Added 1 jar sauce to chicken. Covered bottom of 9X13 with 1/2 the other jar and after assembled topped with rest of sauce. Cover with foil bake 50 min then remove foil and bek 10 more minutes. Yummy. Also sprinkled parm cheese and fresh ground black pepper on to each layer.

Take your time with this recipe and you will be happy. Only used 1 & 1/2 T of sugar and 1/4 c shortening and 1/2 c butter. In food proc pulse dry items, then add butter/short, pulse until crumbly, add liquid, pulse a second or two. Try not to touch a whole lot. Use a floured surface and gently roll out. I baked 350 10 minutes and 400 for 5 minutes
