My cooking tragedies
While making eggplant parmagania for a buffet, I breaded the eggplant but forgot to fry it before baking it. When I attempted to transfer it from the pan the entire breading slid right off with the sauce and cheese, I was left with bare eggplant.

Chicken Marsala
AWESOME!!! I did not use sherry made a little more sauce..perfect. I used 4 T butter + 1/3 c EVOO. Used 1 & 1/2 c marsala sweet wine. When I flipped chicken to cook on other side, I added 3 cloves chopped garlic with the mushrooms. Then removed chicken and added 1/2 c heavy cream and 1/3 c chicken broth mixed wth 2 T corn starch...cooked until slight thickened and then added chicken back. Also put flour in paper bag for easier clean up.

Chicken Biscuit Pie
sauteed onion with fresh carrot and celery in butter for 5 minutes. I had to add about 1/2 c more milk. Topped with T scoops of bisquick, 1 inch apart baked 14 minutes. Also added mixed veggies (2 c corn, peas and carrots) added 1 t poultry seasoning

Chicken Scampi II
Nice. sliced chicken in strips and dipped in seasoned flour. Only used 1/4 c butter and 1/4 cup EVOO. I used 4 cloves garlic. cooked over medium heat so not to burn garlic. Add a few slices of red, yellow and green peppers. Also added a few sliced mushrooms and diced red onion. Add end , I turned up the heat and added 1 c of Chardoney and cooked off the alcohol..perfect sauce. Toss with pasta before serving.
