Portuguese Pork with Red Peppers

I keep forgetting that this one needs marinading. I just look at the cook time and get started. Hmmm, I am sure it would taste better marinaded.

I added mushrooms. It tasted good but the colours were all a bit dark and lifeless. Definitely needs something on the plate with colour.

No butter added, but lots of spinach to make a good size pile on top of the fish which browns nicely. I use this recipe often and for guests.

Portobello Mushroom Stroganoff

I add Worcestershire sauce, soy sauce, red wine and tomato paste with the broth to make up the 1 1/2 cups. Very good. This one I even serve for guests with banquette and salad.

Sorry. I think to make this good, you need to chose the best quality ingredients. It didn't have any sauce so it was just dry. We ate it, but I won't make this again.

Chicken Makhani (Indian Butter Chicken)

Delicious, especially the next day or even after a few hours sitting. The third time I made this I used Paneer (Indian) cheese, frying it first before adding. Just as good as with chicken!

Lentils and Rice with Fried Onions (Mujadarrah)

My husband was skeptical but enjoyed it in the end though the yogurt really brought out the flavour. I added more onion but 6 tbsps of oil is far too much even for extra onions. Brown rice (cooked separately, then mixed) with additons of cumin, cinnamon, garlic, garam masala and stock. Careful though, you may not want company afterwards as this may give you a noisy bottom!

Always A Winner Potato Salad

I really like the mix of pickles and green onions. I put bacon in instead of shrimp the first time I made it, and in the second time I made it, I did not add either bacon or shrimp and it was still good. The size of the potato pieces I think make or break the salad. I cut them reasonably small the first time so every bite had a real mix of flavours. The second time, my husband did the potatoes and cut them in fair size chunks so many times, one just got a bite full of potato which wasn't very exciting.

I made this with half the dressing and worked out perfectly. Used apple cider vinegar instead of white vinegar. It made a good amount which I nibbled on for a week.

Good Old Fashioned Pancakes

Needs more milk than recipe calls for (1 and a 1/2 cups rather than 1 and a 1/4). Otherwise, as it states, just a good old fashioned pancake recipe. We have these pancakes every Sunday morning - my husband makes them!

Ginger Crab Cakes

Made these with canned crab. Absolutely fantastic. Probably could have added another can of crab. Very small portions so we were fighting over it. Didn't change a thing except not to add the hot pepper sauce.
