Yummy Sweet Potato Casserole

I made this for Thanksgiving 07--even baked it longer than suggested and the inside was still a little runny. Does anyone know what I did wrong? It was very yummy and I'm going to try it again this year. But I will bake the potatoes this time instead of boiling. Maybe that will make the difference?

Cafeteria Carrot Souffle

Yum! My children had seconds! I also halved the sugar and used a mix of brown/white sugar. It was plenty sweet! Also added 1/2 tsp pumpkin pie spice. 30 minutes was a perfect cook time for half the recipe, so I agree with other reviewers that the full recipe may need up to an hour. Will definitely make again since each of my kids probably ate a whole carrot and not too much sugar since I reduced it!

Eileen's Meatloaf

I have tried several meatloaf recipes from this site, and I think this is one of the best. It has few ingredients which I LOVE. The only thing I slightly changed was to use real bread and saltines for the bread crumbs since I didn't have the Italian bread crumbs on hand. And I did add the ketchup/brown sugar/bbq topping because we prefer to have something on top.

Homesteader Cornbread

This is a fantastic cornbread recipe! The best! We added finely chopped onions for added flavor and moisture and also used our cast iron skillet to bake it in (had to cut the recipe by 1/3). A keeper for sure!

Chipotle Crusted Pork Tenderloin

Per other reviewers, I cut the chipotle down dramatically because we have young children and because I had the Chipotle Chili PEPPER and not the Chili POWDER. Thanks to the reviewer who explained the difference! Great flavors with the pork, even with the change. Very moist and tender. Cooked in grill pan for 20 min--tranferred to hot oven till it was cooked through.

Basic Chicken Salad

Great recipe. I enjoyed it as is; next time I may add grapes and nuts, but I didn't have any this time. I think the lemon juice makes a huge difference--don't leave it out. Thanks!

Irish Chicken and Dumplings

SAVORY--Fantastic flavor. I grew up on flat dumplings, and my husband likes the refrigerated biscuits as dumplings. This is a great compromise, and actually we like it better. I didn't have potatoes or carrots on hand(only a can of mixed vegetables), so I did not add the 1 teaspoon of salt. Without potatoes, no need for additional salt since it already had 2 cans of soup. Whole family had a bad cold--this was very soothing and comforting! A++

Kay's Spaghetti and Lasagna Sauce

This is the traditional sauce I have been looking for over the years. This is a great recipe. I just added a 1/4 pound italian sausage for the hubby and another clove of garlic. Just awesome. It has the perfect texture in my opinion.

Chicken Breasts with Balsamic Vinegar and Garlic

This was a good recipe, though it was a little too tangy for my personal taste; maybe next time I will slightly reduce the vinegar. I served it with a quick side of Zatarain's Long Grain/Wild Rice. It went very well with the flavor of the sauce.

Balsamic Chicken and Fresh Mozzarella

Wow. My husband even liked this, and he rarely comments on meals, even if they are very good. So this is a keeper! Very good combo of flavors--perfect for entertaining. The only thing I did differently was that I browned the chicken in some olive oil in the skillet and then baked them to cook through.

Sage Pork Chops

BEST pork chop recipe I've ever tried! Simple, few ingredients--has a very savory and homestyle taste. Moist--not dried out like most pork chop recipes I've tried. Can't wait to make again! Husband loved the gravy (I added the cornstarch and water mixture to thicken).

Salsa Chicken Rice Casserole

Very easy and tasty! My husband and I really enjoyed it.. our three toddlers did not, but they are picky and don't like dishes where everything is mixed together. Good with sour cream--will add tortilla chips on side next time too. Very good, thank you!

Baked Flounder

Giving this three stars because it may not be the fault of the recipe that ours turned out horrible. We couldn't even eat it because it was so bad--very bitter. I am hoping it was just the fish as I'm not sure how the ingredients would have given it such an awful taste. Glad the rest of you enjoyed it though!

Cornbread Stuffing Southern Style

Delightful! Just made it as a trial run for Thanksgiving. Husband said the more he ate, the more he liked it. I added a few slices of broken up toasted bread because we are used to more of a bread dressing. The mix of bread and cornbread was just right for us. Great recipe and measure of herbs/spices.

Famous Butter Chicken

So easy and flavorful! I did season the chicken AND cracker crumbs as others suggested--used seasoned salt, garlic powder, pepper & a little thyme. I can't get over how yummy and moist this chicken is. I always have these ingredients on hand--very convenient!

Braised Balsamic Chicken

I followed the recipe exactly, but the vinegar taste was too strong for us. It was 'ok'--but based on the reviews I was expecting it to be very tasty. Also seemed like it was missing 'something' else.
